Chocolate banana cassava cake (Work In Progress)

How do you become a better baker? How do you become a better human? Just keep trying different things until you hit your ideal, I guess. Here's what goes through my brain when I'm reworking a non-recipe into a recipe.
Final version of chocolate banana cassava cake:
3 bananas, mashed
1/4 c evoo
1/2 c granulated sugar
Pinch salt
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp baking spice (your choice)
2 tbsp coconut powder (optional)
1/4 c yogurt
1 large egg
160 g cassava flour
Stir all ingredients together until smooth and combined.
Divide batter into 2 and into 1 portion of batter, add:
13 g cocoa
1/2 tsp almond extract
48 g sweetened condensed milk
1/2 c. chopped chocolate (optional)
Pour both batters into an 8" square pan greased with butter and lightly swirl together.
Bake at 350°F for about 22 minutes until surface is matte, edges bounce back slightly when pressed and begin to release from sides of the pan.
Optionally, brush with liqueur or syrup while hot.

June, long-time fan from Brazil here. This cassava flour you’re using is toasted, which means that this is “farofa” flour. Not sure if you know what “farofa” is, but it’s a savory side dish we eat with beans and other brothy dishes. To bake, you need non-roasted cassava meal or flour, which is what we use for “pão de queijo” (Brazilian National snack) and other baking purposes. Lots of love!

The "non roasted" you're talking about is the cassava starch but yeah, I don't think she'll achieve the consistency she wants with the toasted flour. I hope she does tho

Loved this June! I know I am going to love the videos going forward with you having complete creative control. I loved that you pointed out that cooking is doing it over and over. I always say that we learn a little more from our fails than we do from our success. So, yes, highs and lows, that is what it is all about. Without this, sourdough would not even exist!

my partner from northeast region in brazil said that in order to make bolo de aipim (cassava cake) you can just grate the raw cassava and put that in the cake mix. this way you’ll achieve the soft and bouncy texture you want. you can also use tapioca flour (the starchy type) if you don’t want the whole arm work to grate the cassava. this type of flour you are using we usually just eat as it is, with the main dishes such as beans and meat. in brazil, farofa is really popular and is basically stir fried roasted cassava flour with anything you want in it.

As another comment stated, that type of cassava flour is almost exclusively used in Brazil to make farofa (look it up, it's easy, savory, crunchy, delicious)! It's coarse and slightly toasted, so it would not behave as tapioca starch/flour. The terms are generally confusing because sometimes in Portuguese we don't use the term "tapioca" for the flour itself, it's more the name of various dished made with the starch.

In Surinam there is a cassava cake made from grated raw cassava , grated coconut and with raisins and cubed pineapple. It is mixed with melted butter, eggs, vanilla essence, almond essence, sugar and cinnamon. It turns into a very moist cake. Super delicious!!

Same here! I've been baking for almost my whole life and even did an 8-month course on pastries...but whenever people ask me for baking advice or questions like "why did my cookies spread so much," I'm always at a loss for how to explain why things work the way they do. There are so many reasons why a baked good can come out wrong haha.

Hi June, im pretty sure the flour you`re using is supposed to make `farofa´, a typical brazilian dish, so that type is toasted cassava flour... witch im sure can be used for baking but wont give you the amazing results.... try tapioca flour wittch is also from cassava, but comes from a different process :) or try to make farofa... its crunch and mushy, you gonna love it.

I agree. The roasted cassava flour will probably bake similar to corn grits. It won’t be fluffy and airy, but dense and gritty (struggling to describe this consistency)… Tapioca flour will be in the refrigerated section and it’s white. Oh! Now I realized. There are 2 more types of tapioca powders! The sweet tapioca starch and sour tapioca starch…

June, if you want to try farofa (the salty recipe for cassava flour). A super simple way is to sauté some thinly sliced onions in a generous amount of butter until golden and add the roasted cassava flour and salt and pepper to taste. You can add bacon, boiled eggs, green olives and cilantro. The cassava flour should be coated in the butter. It’s usually eaten with pinto beans or with barbecue, but I like to eat farofa with potato and mayo salad.

I cant speak on other brands/types, but that specific cassava flour you bought is meant to be eaten as a side dish with rice and stews, it's not super baking friendly because it doesn't really hydrate all that well, it doesnt absorb liquids completely if that makes sense? In Brasil we eat it as a dish called farofa, which is basically toasted cassava flour with toppings like bacon, onions, garlic, greens, some places have fried banana mixed in! Lots of options! I'm pretty sure there's a different kind of cassava flour meant specifically for baking, this one is fighting against you 😂

I think letting the cassava sit & hydrate was a genius idea, I imagine this would probably be work great using all liquid sweetener like maple syrup or even all sweetened condensed milk. Fantastic effort.

I have many things I've made that just didn't work out or things family can eat have changed. I am going to try to not think of them as failures or something we can't have. Depression is insidious in how I feel I've lost things. I need to think about it as a change in things more. The cake looked really good in the redo. Thank you.

Hi! For a very long time, I thought I couldn't bake either, and then slowly, by watching your videos and other amazing creators, I learned about gluten formation, and moisture, and blooming cocoa powder, and reading oven temps and not relying on the recipe stated baking time. Now I believe in myself. I still burn things sometimes when I am distracted, but then I usually know why I messed up, and can adjust for the second attempt. Thank you so much for all the lessons!

I love almond extract! I feel like it's under rated too! And I agree 100% about the baking vessels. I have donated all my non stick newer pans..and gone back to my old school stuff I've had for years. They are well seasoned, as in they have been used alot lol. And things almost never stick or burn in them. I've had some of my baking pans for 30+ years.

This video was fabulous, both in terms of content and editing! When I hear you talking about not wanting to create a cookbook with recipes, I totally agree. I use recipes as guidelines, and I can google just about any recipe I want. However, if you were to write a book, what I'd be interested in is a type of pick your brain kind of book where you teach folks how to do just what you did in this video. I realize a lot of your ability to do what you do without recipes comes from familiarity with ingredients, especially when baking, from your years in the industry. Still, I marvel as I watch you combine multiple types of flours together with the wet ingredients you have on hand and get a yummy baked good. Watching your lives has made me think I need to create some type of chart (I haven't yet been able to find exactly what I'm looking for) using non-wheat flours and what types of adjustments need to be made when substituting them for AP flour, in the same way you talk about how the properties of cassava affect the ratio of wet ingredients. I'd love to learn so many things that I just don't have the time to do trail and error, such as how different wets impact moistness or how much sweetener is needed to replicate sugar and when it can and can't. Thank you for being such an inspiration!

Pro baker here ❤ Gotta have emulsifiers, more leavening and more liquid in that cake to compensate for the cocoa powder (drying) and cassava. And, I will not 💩 around my man lol; however, we are very much in love 😂 Good luck with the cake, June 🥰 P.S. watch out constantly eating that dough and touching everything if you can… germs 🦠 are not our friends😢

Ohh I wanna try this right now. We use a lot of cassava flour in Brazil but I've never seen it used to make cake. When we make cassava cake, it's usually raw cassava that goes in it. But it looks really good. I wanna try to see how it turns out 🤗 Oh, and by the way, I just wanna say that I really love your videos. I legit hate being an adult but watching your videos makes me feel less alone, like I'm not the only one struggling with adult life (and trying to survive this capitalist hellscape ✌🏻). June, anyone can have a potty mouth, it shows strength of character to elevate our communication skills: It is one small way to make the world a better place. It doesn’t cost much and it also makes your channel family friendly. I’d like my granddaughter who is a toddler to enjoy your channel. She recognizes you from your early work videos.
