The best ever chocolate zucchini cake recipe! If you've never had zucchini cake before, you're in for a very tasty surprise! This rich, chocolate cake is made with dark cocoa powder, melted chocolate and grated zucchini! The cake layers are not too sweet and well balanced. OMG! I tried your recipe yesterday, and it is divine!! I had a little problem with the melted chocolate firming back up while was trying to mix it in the batter, but otherwise, it was easy as could be. The cake is SOO moist and chocolaty! This recipe is a keeper, and I think it's going to replace the one I have used for the past 30 years! Thank you for sharing!

I'm very happy you loved the cake!! :) It's one of my favorites! The zucchini really transforms the cake! For the chocolate, keep it warm or melt it right before adding so it doesn't solidify once you add it to the batter. Thank you so much for giving the recipe a try!

Tatiana, can you please make a "Monkfruit Sugar" (sugarless) "paleo/keto" chocolate butter cream cake? Preferably one made without gluten, i.e. wheat flour. There are many starches & flours with practically 0 carbohydrates to work with. Thanks!

Yours is the one and only recipe I have come across that uses melted chocolate in the batter. This intrigued me. I have a recipe for chocolate zucchini cake I have used for many years, but I may just have to try your recipe. In my recipe, and in a lot of chocolate cake recipes, it says to use strong coffee instead of milk for a richer chocolate flavor, what would you think of doing that with your recipe? is there such a thing as too much chocolate? LOL. Thanks for sharing!

Thanks for watching my video! This cake is one of my favorites! It turns out so rich, moist, and super chocolate-y! Instead of using coffee, you can add a few teaspoons or a tablespoon of instant coffee to warm milk. It does help increase the intensity of the chocolate flavor. Hope you enjoy my recipe!

Good morning Tatyana! 🌞 This is a definite 'YES' to chocolate zucchini cake!! A simple but tasty basic cake with the added surprise of zucchini. Chocolate with chocolate and more chocolate.....YES!! I have used your recipe for chocolate buttercream many times. It just never fails me, the buttercream is pure delight for my taste buds! 🥰 I also have to tell you that I did make your zesty garlic grilled veggies. Like I stated in my comment, I needed a change-up on veggie recipes, thank you! I paired it with your recipe for lemon herb salmon, it was all so delicious!! Cake Flour:1 cup = 3/4 cup + 2 T gluten flour and 2 T gluten free cornstarch For Chocolate Zucchini Cake: 2 cups grated zucchini, about 1 large zucchini 4 large eggs 3/4 cup vegetable or canola oil 1 cup whole milk 1 1/2 cups white granulated sugar 1 tsp vanilla extract 1 tbsp instant coffee 1 cup semi-sweet chocolate chips, melted 2 cups all-purpose flour 2 tsp baking powder 2 tsp baking soda 1/4 tsp salt 1/2 cup dark cocoa powder For Chocolate Buttercream: 2 cups unsalted butter, softened at room temp 1/2 cup semi-sweet chocolate chips, melted 1 tsp vanilla extract 2 tbsp cocoa powder 3 cups confectioner’s sugar Preheat the oven to 350F/177C and line two, 8-inch cake pans with parchment paper and spray the sides with baking spray. Wash the zucchini and grate into a large mixing bowl; no need to peel the zucchini. Next, prepare the cake batter. Into a large mixing bowl, add the eggs, oil, milk, sugar, extract and instant coffee. Using a hand mixer, whisk or stand mixer, mix the ingredients together for 3 to 4 minutes, until the eggs are well beaten. Melt the chocolate in the microwave or over a double boiler, then add into the cake batter and mix for 1 minute. In a separate bowl, combine the dry ingredients: flour, cocoa powder, baking soda, baking powder and salt. Sift the dry ingredients into the cake batter, then mix for about 1 minute, just until the dry ingredients are incorporated. Watch my video recipe to see how it’s done! Next, fold in the grated zucchini using a spatula. Divide the cake batter evenly between the two pans. Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean. Remove the cake layers from the oven and let them cool in the pans for about 15 minutes, then remove them onto a wire rack and cool completely. Once the cake layers are cooled, use a long serrated knife to split the layers in half. Making Chocolate Buttercream: While the cake layers are cooling, prepare the chocolate buttercream. Place the softened (not melted!) butter into a stand mixer bowl and whisk on high speed for 7 to 8 minutes, scraping down the sides of the mixing bowl often, until the butter is fluffy and white in color. Next, add in the melted chocolate and vanilla and mix again for a minute until the chocolate is incorporated. Next, add in the cocoa powder and confectioner's sugar. Whisk on low speed first until the sugar is incorporated, then whisk on high speed for 3 to 4 minutes, until the buttercream is light and fluffy.

Hi! Thanks for reaching out! Unfortunately, the marshmallow will only work with agar gelatin - it sets much firmer and at room temperature. If you can't find it in stores, try ordering from Amazon. I get mine online :)

Sure!! I recommend using erythritol in place of the sugar and you can use a combination of almond flour and gluten-free flour.
