Thanks a lot guys for the episode! I have a question, probably more around general fermentation. During dry hopping if I am correct, there there is still some fermentation activity present, how does it affect the properties from the tea leaves or even just regular hops? Or yeast just wants sugar?:)

That's a great question. Lately it seems more and more homebrewers are adding dry hops when there is a bit of fermentation left, maybe like the final 5 or 10 gravity points. I think the idea here is that the agitation of fermentation helps distribute the acids and oils of the hops better than just plopping them into static final gravity beer. So I'm thinking the same could be true for tea leaves, that it will help disperse the flavor more quickly. Although I'm sure someone out there has science to disprove my thought (as always!). I could see another line of thought where at least for tea it's better for it go into the calm post-fermentation beer so that it's more controllable as to when you have reached the flavor you are looking for and remove the tea. Hope this makes sense and helps a bit.

Actually slight correction generally white should be considered more oxidized than green - it's typically about 5-8% oxidation

I love tea as well and have recently discovered the joys of oolong. We have a brewery (Black Acre) in Indianapolis, IN, that makes several beers with tea, including Earl Grey and Green.

Wow man.... thought we lost you for a while there. glad to see back. I really like your Black tea shirt and Charly P is rocking as usual. those look like some really cool beer's, I would love to try the ESB from Summit. maybe next summer I will try a home brew version.

Great episode Chip. Recently I started getting into 2 gallon batches and experimenting and refining my recipes. Now tea is going on the list of ingredients to explore for sure. Anything interesting I will shoot you a comment. Thanks for the great content, keep it up.

Funny, I was thinking exactly on this topic moments before I watched this episode. Was considering adding some Vietnamese coriander right at the end of the boil. It has a peppery citrus flavour, but it is quite astringent !

I've brewed with Tansy, Pennyroyal, Saffron, Blue Lotus and Helichrysum for some interesting flavors. I just figured it was more of a Gruit style.

Great episode Chip. As someone who is still a relatively new homebrewer your episodes are so informative for even the most advanced homebrewer but still not intimidating for the noobs in the crowd. Totally intrigued by the Lapsang Souchong!!!! Keep up the good work. Cheers.

Hi, I've add 50g of Matcha tea into 20l of Belgian Pale Ale into secondary. Aroma is astonishing, taste fits for me, for others not. There is still some room for improvement in terms of tannin but it is drinkable anyway :) Thanks for 'pushing' me into tea-ales :)

Interesting stuff, dude. I have messed with the Lapsong Schouchong (yeah... that's not close on the spelling.) in a smoked porter. Crazy campfire. A little goes a long way with that stuff. If you dialed it in, though, could be rad. Keep up the good work, my man. Cheers.

I made a 23L black IPA with 150g lapsang extended steep. very very smokey, super smooth. got the inspiration from this episode.

So, speaking of tea and beer, I got a nasty case of the flu right now and haven't been able to sleep. So my friend told me that if you make tea out of hops, it helps you sleep. Well, I took his word for it and brewed some tea out of a half ounce of Cascades i had left over from a brew. It tasted like shit (there's a reason that hops are generally added to wort, which is essentially complex sugar water) and didn't help me sleep at all.

Well, heck. That sucks! I know people used to put hops in pillow with other herbs like lavender to encourage sleep.

Can i use a Homebrew Stockpot Boil Kettle to brew tea in bulk. Please help any tea expert. I looking to brew Green tea, Black tea, Thai tea and hibiscus.

I`ve used the Lapsang Souchong in a Stout and it turned out awesome. 30 grams (in 5 liter) for 48 hours gives plenty of flavour. Some people even thought the beer was brewed with smoked malt. I will definitely use it again in a dark beer. Maybe a Bock or something.

+ChopAndBrew So today I decided to add it to a Bock as a trial as well. I used some method as with the stout: "dry tea-ing" with 30 grams in 5 liters for 48 hours. Next week I`ll be visiting friends in Cardiff and London (I`m from Holland myself). I`d would given you a bottle, but Dublin is just a bit too far away sadly.

Very informative video Chip and Jessica. There's a beer brewed here in New Zealand by Yeastie Boys called Pot, Kettle Black Remix. It's a black IPA with Earl Grey blue flower tea in it. I'm going to try brew up a clone. From what I understand watching the video, because it's a black tea, am I better to steep it at the end of the boil, rather than putting it into secondary? +TubeDinoz I think Jessica would suggest secondary. Though I recently had good results post-boil steeping espresso in a stout. But make sure the temp has dropped a bit and you don't leave it in very long if you do decide to go hot-side.

ChopAndBrew Awesome. Thanks for your reply. When I drop the temp down to 80C for the hop stand/whirlpool, that might be a good time to put them in. I guess I could even mix it up and do half the tea post boil and the other half in secondary. Cheers Dino

Great episode! Quick question - when "Dry tea-ing" do you make a tinticure with some neutral grain spirits first? Spritz them with Star San? Basically ...how for you avoid infection times?

Matt Waldron When dry-teaing, you just put the tea in straight. If you are concerned you could use the second method and steep hot for the directed amount of tea... then let cool and add at bottling or kegging. You could probably use a spirit-based tincture as well, though Jess didn't discuss that directly. Make sure you taste-test it before adding to your beer.

ChopAndBrew one more question - in the bog it looks like there are some very specific, sealable tea bags being used. Is that the case? If so...where can we get them? If not, will a tied off hop bag work?

Matt Waldron I believe anything you'd use for keeping hops contained would work. In this case, Jess was specifically saying she uses these: www.amazon.com/T-Sac-Filter-Disposable-Infuser-Capacity/dp/B001EM9ZRM and staples them shut.

Help 🤔I have been regulated to gluten free brew and only have a tiny bit of brew experience. I only ever have herbal teas so I am wondering if you or your guest might lend a hand. I just want to make a very small batch but have no idea where to start.Thanks

Are there any issues sanitation wise with adding tea during secondary fermentation? Just throw it in there?

+Schlitze Swears Seems to work just fine as long as it was packaged and handled correctly. You could make an infusion in near-boiling water and cool it down if you were concerned. But so far, so good on the homebrew and pro scale that I've witnessed.

Here was Jess's response: Hey David, Hmm. Yes to the 1oz. per gallon rule. If it’s in cake form, break it up to maximize surface area. Puer is really earthy, kinda bardyard like. I could see it going well in a malt forward beer, paired with some dank old school hops. Maybe a brown or a bitter? Barnyard also makes me think of a brett beer - that could be really interesting - but the tea flavor might get lost. Super interested to learn what you end up making and how it turns out!

@@ChopAndBrew Thank you Jess, I am a bit the opposite of patient. I thought about it and read what I could and finally settled on my own concoction. I am creating a no boil saison. East Kent Goldings hops and Belle Saison Ale yeast. Want to ferment at 80º and higher. It's hot here in Chicago and I can dedicate a room to remain hot. I boiled the mash and sparge water together and added the Puerh tea. I am a bit of a tea snob and insist on my ripe Puerh being a earthy as is possibly, like moist dirt and worms. The liquid has the attributes I am looking for and will brew a little later today when it cools down a bit. Will keep both of you informed. I almost went with a bitter but thought a higher abv brew was called for and the tea itself it it's own kind of malty.....

@@ChopAndBrew If it is indeed palatable I will send a bottle your way. Only making two gallons this batch. I was reading about the yeast and it is possible that it will be ready to bottle in 4 days. I am not how to tell when it has fermented enough? Thanks again!!!
