SERVES: 2 or 3
INGREDIENTS
2 tablespoons extra-virgin olive oil
1 medium white onion, finely diced
4 garlic cloves, minced
1 teaspoon dried thyme
3 medium carrots, peeled and finely diced
3 celery sticks, finely diced
1/4 cup all-purpose flour
1 (32-ounce) box low-sodium chicken or turkey stock (or homemade)
2 pounds cooked turkey meat, shredded or cut into large chunks (about 4 cups)
Kosher salt
Freshly ground black pepper
Chopped flat-leaf parsley, lemon wedges, and red pepper flakes, for garnish

Wow - never used thickener before - what a revelation! Never going back. Reminds me of the PA Dutch Chicken Dumpling soup - so thick and flavorful. Love the pepper flake heat as well. Making Turkey Soup is my favorite part of the holiday. Turkey noodle for T-Giving and Turkey barley for XMass.

One of the best things about Thanksgiving is what to do with the leftovers. This is a fav along with turkey pot pie. Turkey corn chowder works for me too as an in between if not enough leftovers to do both. Dark meat enchiladas are delish too.

My family doesn’t like celery, either! I adjust recipes by using other firm veggies instead of celery. Also, I sometimes use diced apples-an excellent addition to holiday stuffing.

I didn’t do a turkey for Thanksgiving but I’d buy one just to make this or a stew. I bet this would be good to freeze.

Definitely want to try although we didn’t have enough Turkey left over to try this time. Might also substitute with chicken until we do cook another Turkey!

Another straightforward ans enjoyable video of Amanda, and another set of annoying and mean-spirited "editorial" text boxes. Just ... leave out the snarkiness, please. She's got a great palate and serious cooking skills, so why not let the viewers enjoy that in a straightforward way?

I don't like celery in my dishes either but like the taste, so I just us large pieces and fish them out after the dish has cooked.
