Hi Nora Alice, I am excited that you are going to make Danish pastry! I would suggest you to make the dough in a day and baking the next day! Even though we need only little hand work,this requires long resting and cooling time... For making the dough in total ,took approximately 3.30 hours (mixing dough (20 min)+First proofing (2 hrs)+Refrigerate (1 hour)+rolling and folding 3 times (30 min)+(30 min) refrigerate+(5 min) fourth folding. Keep it in refrigerator overnight or 4-6 hours. The next day,It will take Approximately 2 hours..i.e, Rolling ,filling, dividing 20 min Second proofing 1 hour Baking 20 min. I m sure you will make awesome Danish pastry:)All the best!! Waiting to hear about your Raisin rolls !

Yes Sonal,instead of egg, we can use use milk.Brush the top of them with some milk .This will give a nice golden color; though we cant get the shine that we get while using egg.
I’ve made the dough... in the fridge... will give the feedback once I bake them Regarding the oven... I have a fan assisted oven.... will the temperature vary accordingly?

Yes you can.When using puff pastry sheet, we dont need to wait for the proofing.Just roll and shape and then immediately place into 425 F preheated oven and bake for 10 minutes and then reduce the temperature to 325 F and bake for another 10 (approximate)minutes .(the pastry sheet should be cold while taken into the oven)

Hi Chin Man Chung,These croissants stay fresh at room temperature for about two days. Keep them from both drying out and absorbing moisture from the air by storing them in a plastic bag or wrapping them in foil. To bring the exterior back to a crispy, just-baked texture, heat the rolls directly on an oven rack at 200 degrees Fahrenheit, but leave them in for only 2 to 3 minutes so they don't get overly browned. Hi Bincy, Your presentation is nice. Do you know the recipe for sweetna which we get in kerala bakery. I think it will be similar to the cinnamon roll. Also can I use oil instead of butter?

In this recipe,inorder to roll the pastry sheet smoothly, we need it firm( as butter will get solidified when refrigerated) ..so i don't think oil will work ..may be a combination of butter and oil may work. Hi Nita, while folding pastry dough,our only intention is just to fold it four "folds"..and in between the folding, butter may start to melt slowly; at that point stop folding and keep it in refrigerator until the dough firm up(may take 30 minutes)and when it is firm continue folding.It's better to keep it refrigerated after every 2 folds.And one thing to note is that after folding four times we need to keep that 'final pastry dough' in refrigerator until the butter really gets cold(may take about 3-4 hours)..Such cold butter layers is that which gives that flaky layers to our pastry.Nita,All the best for making wonderful danish pastry..
