Chewy Molasses Spice Cookies
Special Equipment:
Stand or hand mixer
Ingredients:
3 3/4 cups all-purpose flour (17 oz / 488g)
1 tablespoon baking soda (0.63 oz / 18g)
2 1/2 teaspoons ground ginger
1/2 teaspoon finely ground black pepper
1/2 teaspoon ground allspice
1/2 teaspoon Diamond Crystal kosher salt
1/4 teaspoon ground cloves
1 1/2 sticks unsalted butter (6 oz / 170g), melted and cooled to room temperature
1 1/2 cups packed dark brown sugar (10.6 oz/ 300g)
2 large eggs (3.5 oz/ 100g), at room temperature
1/2 cup unsulfured molasses (5.6 oz/ 160g)
2 teaspoons apple cider vinegar (0.33 oz/ 9g)
2 teaspoons vanilla extract
1/2 cup demerara sugar, for rolling

Question! You mention it’s best to let the cookie dough rest in the fridge ….. if planning to freeze it should you do that before you freeze it was well? Then thawing how long do you wait for it to thaw …. Should it rest sort of speak after thawing ? Any help would be great thanks!!’ I love love love your book I read it like an actual book and have made the banana bread and focaccia…. My first Claire recipe was actually your cherry cobbler from the BA show

@Ghost Speaking as someone who has worked in PR - it very clearly was not product placement lmao, real placement would actually have product positioned properly out in front with all the branding in clear view and the bottle not obscured by literally every other product around it. Like, no brand would ever approve that, which they have to if they're going to supposedly pay for the placement. Surely the fact that the front of the bottle is turned completely away from the camera should make that obvious. It isn't even fully shown properly in the 2 second close up. Just so you know, simply mentioning the name of a brand, or saying you like something or the editor having to point out the item being talked about so people can see exactly what's actually being referred to because it's so obscured does not on it's own mean there is paid promotion behind it. Claire and the team are actually really good about disclosing what is and isn't sponsored.

Quick request to the filming crew: could we get some more up close shots of the recipe when it’s coming together and when Claire is describing certain things to look for? Her verbal descriptions are great but it’d be helpful to see as well!! Love the videos and have really enjoyed so many recipes from Dessert Person!

These are my grandpa’s favorite cookies! I made them last year when I first got the cookbook, and he’s been asking for them all the time ever since. He keeps a stash in the freezer in case I’m too busy to bake another batch! I dropped these off for him when he was alone in quarantine and loved knowing something so easy to make could brighten his day!

Molasses cookies remind me of my grandmother. When I was a kid she would bake them and mail them to me from her 100-year-old farmhouse in New Brunswick, Canada to my house in Ontario. When she passed away a few years ago at the age of 91, I made sure to raid her kitchen to find the recipe for her famous molasses cookies before I left for home after her funeral. RIP Grammy. You'll forever be missed. 🙏

This was the first recipe that I made when I bought the cookbook shortly after it came out. They're my husband's favorite type of cookie, and they were a big hit with the family! I did learn to scale down the time a bit to accommodate for my high altitude as the first batch I cooked to time, and they came out almost hard as rocks 😂 went perfectly the second and third try though with just a bit less time in the oven and chilling the sheet tray before baking!

I made these for a work party and they were lovely. Certainly, the spice combination might not work for everyone, but those who like the warm spices REALLY liked these (myself included). I'm going to give these a try for Christmas as well, so I might try some red/green sugar instead of demerara sugar.

I’m also a big fan of the original Archway! I most miss the Soft Sugar cookies and the chocolate version of their Molasses cookies. I was so sad when the Archway display came down in our grocery store :(

i love making these so much. i make them triple ginger though; crystalized ginger (finely chopped, just adds some more texture), powdered ginger, and fresh ginger. they'll clear out your sinuses for sure, but theyre so nice and warming.

Wow! This is a fantastic cookie. Once again Claire knocks it out of the park. I doubled the recipe easily for my Christmas baking. I followed the recipe exactly. I weighed them on a scale at exactly 1 ounce each. They are beautiful with the perfect chew. You will not be disappointed in these!

My mom has a really similar molasses-gingersnap recipe. I've absolutely loved them since I was a kid. Every year for my birthday and Christmas she makes me a HUGE batch of gingersnaps. I usually down them in less than a week, and then spend the rest of the year waiting for the next batch. Her recipe skips the allspice and black pepper, but adds cardamom, candied ginger and candied orange peel. She ices them while they're warm with a thin glaze made from powdered sugar, and fresh orange and ginger juice. I think the dough also has some oat flour and barley malt in it.

I'm excited to try this recipe Claire posted but your moms recipe sounds so intriguing and like a recipe I've been searching for, for years. I used to use a cookie mix (now discontinued) that made soft molasses cookies with all the spices your mom used and it also used oat and barley. I made this recipe a couple of months ago and it's just as easy and delicious as Claire says. I put half the batch in the freezer and it kept well for 2 months. I went over to a friend's house over the weekend as part of an impromtu dinner plan, and I took the bag of frozen dough balls with me to bake up in her kitchen while we ate dinner. It was a big hit. They definitely tasted even better on a cool October night than in the middle of August. My favorite part of the recipe is how the sugar on the bottom of the cookie caramelizes. That adds another layer of crunchy sweetness to it. You have to try this recipe!

I just made these tonight and I love how they’re not overly sweet so the spices really get a chance to sign, and the Demerara doesn’t have a chance to make it too sweet. Can’t wait to make the oatmeal pecan brittle cookies tomorrow :) thanks, Claire!

Oh! We've got a very similar cookie recipe in our family. It's my favorite holiday cookie. We're probably a bit simpler in ingredients, and have a slightly different mix of spices (ginger, clove, cinnamon) but overall, it's very similar in ingredients and process. They even look the same in the end! Love it

Many thanks! I have a few variants, one with crystal ginger either sliced into thin sticks on the top, or a small chunk in the center like Onigiri Accidently made a dry batch last year. Rolled/smashed into crumb and used for some Cuban Rumballs (just icing sugar, rum, blend, form, roll and chill)

Great video! I've made these cookies before for my mom, because molasses are one of her favorite cookies. They were amazing! So chewy, and the sugar coating was nice and crunchy. I made it with a hand mixer and they were still easy to make.

Very similar to my grandmother's recipe for molasses cookies, which we make every year for Christmas and handout as gifts. I can attest: they are magical.

Followed the recipe exactly, but came out puffy and cakey! It’s still delicious. I have this problem with any cookies I make. I rewatched, and maybe I had over whipped the butter. Will need to retry and make more cookies!

My family has very few “family recipes” but ginger molasses cookies were such a huge part of my childhood I would pick the one with the best most defined ring on the bottom😁😁

These are beautiful… I can tell! Just made the dough, have it chilling in the refrigerator. The only thing I’m going to do, as to not make them sweeter, they’re perfect as is! Is, I’m gong to scoop and bake. I’ll try smaller sizes and I can’t wait to experiment with it since I have good cookie scoopers. Thanks for sharing this. I have your book, amazing, and it’s cool to see a video and your demonstration/information/explanation are spot on! I also added one teaspoon of cinnamon, I have so much, why not. Lol 🥹🙏🏽💗

While making these I wasn’t certain I would like them, since I found the molasses really strong in the dough. But once baked and (mostly) cooled, they were amazing! I added a touch of nutmeg and cinnamon and it was wonderful! They remind me of a cross between gingerbread cookies and the cookies used in oatmeal cream pies (despite the lack of oats). Yum!

Made the cookies for a party and they were a hit! I always scale down cookie size and did so with this recipe too. For me, a 25g dough ball (weight pre-sugar coating) baked perfectly at oven temp setting 350F (I suspect but don’t know for sure if our oven runs under with the temp setting). With this method I made about 30 cookies with half the dough, and probably can make another 20-30 with the remaining half (total yield 50-60 cookies with each about 2.5-3 inches in diameter)

I have made on several occasions big soft ginger cookies and the recipe is very similar. You've added apple cider vinegar and I love that idea in my cookies. I however use white pepper as it doesn't set my tummy on fire like black pepper does. Also add just about 1/8 teaspoon of cardamom to really give them zing. My hubbys first wife is Indian and it is a spice that I recently purchased for him. She taught him a few dishes while they were married. White pepper and cardamom with cookies and some apple dishes with brown sugar. Any way thank you for the tips and advice. Hubby has ginger snaps on the grocery list on the fridge. Gonna make these instead. Didnt know about melted butter in cookies, have always creamed. Thanks!!!! 😸

This is very similar to a recipe myself and my family are known for at the holidays. We call them Ginger Sugar Cookies. We have been making these sine I was about 8 years old. So now It's my job to make them (and others) every holiday season for family and friends

I grew up eating the packaged soft molasses cookies and they were one of my favorites. Making these in the next couple days for Thanksgiving. Just picked up fresh spices for prep 👍

This recipe is like sugar molasses cookies amped up. My mom used to make the Briar Rabbit sugar molasses cookies for the holidays every year. They taste exactly like Christmas if Christmas were a flavor :p So yummy

I made these for cookie boxes last christmas!! they were a hit, and I think I made so many that I had leftovers to freeze for a while. They freeze really well after baked!

These are incredible. And dummy proof. I didn’t follow the instructions and basically dumped everything In the bowl and mixed. I exchanged all spice for cardamom and wow. When I freeze, should I freeze rolled in the sugar or do that when I pull it out?
