I made this tonight with no hopes of success, after years of meatloaf failures because there's a lot of disgusting recipes out there. But this was everything you could wish for in a loaf of meat. Life changing, one might say. I will never even try a different recipe.
I highly recommend trying this recipe, I could not stop eating it was so tasty!!! The meatloaf came out awesome, I used half measures to make a small 1lb loaf. A few small subsitutions due to not having some things on hand like using mustard versus mustard powder and regular sugar versus brown in the glaze.
I’m a Midwestern boomer. I’ve has my share of excellent meat loaves, but this one takes the blue ribbon. I prefer my own BBQ/ sriracha/Worcester glaze, but otherwise I followed the recipe verbatim after cutting it in half for this single guy. I simply moulded it by hand on a parchment covered baking tray. Awesome!
I put finally cut up red a green peppers in my meatloaf .My mom made it that way . I make it for hubby that way . Funny since I don't eat meat . Soon be married 50 years Feb 18th . I always tell people my cooking and canning my own food kept us together , I grew up on an organic farm when organic was not a key word .Parents bought a city farm of just over 7 acres and we got to work on it just the 3 of us . Learned to can from my mother . Sad when things have changed so much that family values are dying out
Love meatloaf. I also love meatloaf sandwiches the next day. Bread, Mayo, Sautéed Onions, Sliced pickles and a little barbecue sauce! One of the best sandwiches ever!!!
First time I’ve ever baked my meatloaf on parchment paper! Wow, it was wonderful! No more loaf lying in a grease pool.Also liked the shredded onions instead of chopping. I was lazy and used Manwich for the sauce. 😁👍🏻
Now that’s a proper Meatloaf! Accompanied with Mushrooms, onion gravy , mashed potatoes, peas and carrots with homemade brown or white bread! Yahoo! Not to fussy about the BBQ sauce , I like a little dry mustard and ketchup mix! Cheers
It depends on how I'm feeling, sometimes I glaze the meatloaf with Sweet Baby Ray's original BBQ sauce, some Coleman's mustard and a little brown sugar. I even make a little well down the middle of the meat, that way you get more of the sauce. Other times I cook my meat plain but make a nice brown gravy with onions and mushrooms. Gotta have mashed potatoes too and a nice salad. SOMETIMES... when I go to Costco... I actually make both versions, they freeze beautifully. I make 2 of each version from about 5 pounds of meat if I buy even more meat, I'll get spaghetti sauce going too. I love cooking and freezing stuff. 🎉
That meatloaf looks great and I'm sure it tastes great. CAB is top grade meat to be sure and I worked for 31 years in the beef industry and can attest to CAB's quality as we supplied it out of the Cargill plant in High River Alberta where I worked. CAB beef is all AAA and so very good.
I use 1# lean GB, 1# ground pork, minced garlic, Stove top sage stuffing mix, 2 eggs and 1.5 cups of milk. Salt and pepper to taste. I mix all ingredients in a large bowl with my hands, then remove the mix and form the loaf. I bake @ 350 F for 35-40 minutes. Comes out perfect every time.
There are approximately 341,600,000 people in the US. You will get at least half of that amount of meatloaf recipes - each claiming to be the 'best.' NO ONE is wrong - each person has their own personal tastes. (Try some GROUND Rosemary and rubbed sage...)
WOW, I wasn't expecting this to be as good as it was. I've tried quite a few recipes and none of them compare. I didn't change a thing. I had trouble finding the amount of milk and the oven temp after I'd watched the video. In your comments to someone, you wrote about clicking on "more" above the comments. I was happy to learn of that RU-vid feature. There I found what I needed. Thanks again for posting a great video.

Made this tonight to show my mom in law what I can make...lol...everyone was impressed....I love the onion tactic (pulp) mii mother in law asked where mii dry lipton mix was 🤭 sorry Ma this recipe don't do that. I gotta say that this is one of the best meat loaf recipe I've ever had!!!! This fed 4 ppl with 3 Xtra big slices leftover...meatloaf sandwich for lunch yall...❤
I grew up on US Army meatloaf, which continued on during my Army career. The difference is, you substitute the breadcrumbs for oatmeal. Possibly more readily available at home, and a healthier option! But I wouldn't change anything else about the rest!
Looks terrific. It is on my list for Sunday afternoon. I am glad you emphasized not squeezing the beef, because that destroys the great eating texture of a well-made meatloaf. I have seen and tried countless meatloaf recipes. I spent 23 years eating MRE's and cooking over a heat tab, but since I retired from the Army, I have been teaching myself to cook. Your meatloaf looks easy enough for my primitive skills.
I like the idea of shredding, never can seem to get the dice small enough for the picky eaters. I saw Alton Brown do the loaf pan trick and it's the best.
Yes.......But don’t eat that meatloaf, refrigerate it, and serve on thick slices of white bread with Mayo and a piece of lettuce. I had this one evening in the coffee shop at the Fairmont Hotel, it was called Mom’s meatloaf sandwich, and it was awesome.

Made this tonight 😊I loved the glaze especially…. It was good but I didn’t find it quite spicy enough for my liking… I followed the recipe exactly… only substitute was regular bread crumbs..as that’s all I had on hand… the rest EXACTLY…oh… I had 88/12 hamburg Ty for interesting recipe
Love your recipe. Only thing I added was a bag of corn peas and carrots but also the other adjustment I made was you said to throw it in for 15 to help set a crust. Doesn’t happen at 375 so I cranked it to 500 (which is how I make prime rib) for the first 15 minutes. Glaze it then put back in at 375
That’s how i do my turkey or chicken. I crank it up to 500 and leave it for about 30 minutes then turn it down to 350. It sears the surface and the meat stays nice and moist. I learned that from Alton Brown and my baked poultry comes out awesome every time.
I made this lovely meatloaf Sunday night. It was my first meatloaf and I made it KETO.😋 I didn't have 2lbs of beef so I used a mixture of ground turkey, beef and sausage. About a month ago I bought some mustard powder because it was on clearance. I had no idea what I was going to do with it so thankyou😜 Welp today is Tuesday and I ate the last two pieces for lunch. I couldn't stop eating it lol. My mom isn't a fan of meatloaf but she loved it as well😋 Thank you 💗
Shhh. Don't tell the Angus Beef Police, but I didn't use it ;-) I went with my tried and true 2/3 beef to 1/3 pork mix. But the house is smelling amazing right now on this Sunday evening as wafts of heavenly meat and ketchup circle in every room. I cannot wait to dive into this with some roasted potatoes.
It took me some experimentation but I finally came up with a meatloaf recipe that I love I use a lot of barbecue sauce in it and coat it with barbecue sauce before baking it.

I tried this recipe and it was OK. Much better recipe was my mom's when I used liquid yellow mustard instead of powdered mustard, regular bread crumbs and all the other same ingredients he used. And, yes, much better the next day!!!!
As a non fan of ketchup (and bbq sauce) I truly don’t understand the reason why people insist on adding it prior to cooking. If you want to add ketchup afterwards, that’s your choice
Looks great. Remember - don't squeeze the loaf, sort of pinch it to loosely combine the ingredients. This is where the term "pinch a loaf" comes from. True story.
Hello! Thank you for the recipe. It would be very convenient if you specified that the temperature you mentioned is in Fahrenheit. I'm from Europe, and I assumed that it was in Celsius. Thankfully I realised my mistake before the meatloaf was burned.
I don't eat meat at all but hubby likes meatloaf so I might try this I know when I make him speghetti I put brown sugar in the sauce to cut the acid of the tomato's a little . I have canned my own since I was a child with my mother teaching me and now 70 and still canning and hubby likes it since i grow my own veggies organically just like I grew up with . My parents bought a city farm when I was 9 and they grew organically on 7 acres What is the paper on the bottom . I get 80 % but it sure has gotten more greasy
Using milk is an important ingredient! Our recipe is about 100 years old and it came from Austria with my great-grandmother. If I try someone's meatloaf and it doesn't have milk, I can tell immediately.
Because of the movie A Christmas Story I had a fear of meatloaf as a child but later I realized it's one of the best foods ever and my favorite sandwich too.
Great recipe, and love meatloaf, but even cheap tube burger from Walmart works, I don't spend premium or grind for a meatloaf, a burger yes.. but haven't found a difference in meatloaf, and was long day testing, but lots meatloaf 😂🤣
