I just made red beans today with smoked pork necks. I usually use hocks but my local walmart is now stocking them so thought I'd try them out instead. It came out amazing and they had a surprising amount of meat that came off them. So good, i'll be using them from now on!
Great Video 80, so many other videos have the stock, seasoning salt etc added to the pot with the neckbones before cooking. The soduim level has to be insane. The way you prepare yours is imo the only way. You can always add later if needed but its impossible to take it out once the salt is in beans and the neckbones.
