Recipe by Maimoona Yasmeen
Ingredients:
Cornflakes - 2 1/2 cups
Peanuts/Moong Phalli - 1/2 cup (200 ml cup)
Dry Coconut/Sukha Nariyal - 3 tbsp, small pieces
Roasted Bengal Gram/Phula Chana Dal - 2 tbsp
Raisins/Kishmish - 3 tbsp or more
Curry Leaves/Kari Patta - 1/4th cup
Salt/Namak - 1 1/2 tsp salt or as per the taste
Turmeric/Haldi Powder - 1/2 tsp
Red Chilli/Lal Mirch Powder - 2 tsp
Oil - For Frying + 2 tbsp
Procedure:
1. Add oil for frying.
2. When the oil is hot, add peanuts.
3. Fry the peanuts till light brown, over frying will lead to a burnt smell. Therefore, be careful to remove as soon as they are fried.
4. When the oil is hot enough, add a handful of flakes. Check by dropping a piece of a flake, if it comes at the top immediately, oil is then ready for frying. If you drop these flakes in the cold oil, they will not puff up or they will not turn crispier and after that how long you fry, their texture is ruined. Therefore, remember to drop these flakes in very hot oil and remove as soon as they puff up and turn crispier.
5. Fry all the flakes in turns.
6. Remove the excess oil and leave only 2 tbsp oil in the pan.
7. Add small pieces of dry coconut and roasted bengak gram or phula chana dal.
8. Fry for few seconds, then add raisins or kishmish or you can add more of raisins if you are fond of them.
9. Raisins take lesser time to fry, therefore, add them later.
10. Fry till the coconut, bengal gram and raisins turn light brown.
11. To prevent burning, immediately add curry leaves.
12. When its water is dried and there is no more moisture, add salt, turmeric powder, red chilli powder and fried peanuts.
13. Mix well.
14. Switch off the flame, add fried cornflakes and mix thoroughly.
Cornflakes Chudva is ready. Store in an airtight container and use as per the requirement.
Enjoy this snack with evening tea!
