That Cauliflower Risotto is looking delicious. Using the a pre packaged bag of Cauliflower really saves so much time and energy especially if someone is hungry and in a hurry to eat quickly. Mascarpone made it so creamy. The Fresh nutmeg and Basil added the essential flavors to this amazing dish. Love this dish its on my list to make. Thank you Chef and as always you are awesome.

This is grandeur recipe Chef Jeff, those cauliflower and ground beef are perfect. Your wine with vanilla spice is perfect matched with this Risotto. Its creamy, and made me starving while watchin' around 10pm.

Hi. Jeff! I agree that a non-stick pan is best for lean ground meat. Very interesting to hear that this recipe came to be when you wanted a low-carb version of the classic dish. It's always great when a new creations is a great success. Can you believe that I have never made cauliflower rice? I need to try it out. Good to know I can buy it frozen, or even make my own at home. Marscapone is a good way to make it creamy. I am sure that nutmeg would be a good addition to that. Wow, the finished product was perfect, as always. Thanks for sharing!

I love making cauliflower fried rice.. but never thought to make a risotto with it! Such a great idea! And ground chicken makes it a lighter option too. Came out great! I’ve not heard of that particular wine before! I’ll have to look for it🥰. Sounds delicious!

Love this version of Risotto. I am checking into the lactose amounts of various cheeses (comparing marscapone to cream and neufchatel) to see if I can make this for more than one person to eat lol. Thanks for the tips and I will check it out.

This is great for the summer season! It looks so light and fluffy and easy to down once you're ready to eat! Still always amazed as you are able to define all the ingredients you taste in the wine! I am always at the edge of my seat wondering what you're going to say lol! That marscapone (not sure how you spell it) cheese really got me! :D I like this style of meal on a hot day indeed!
