Hi, Jeff! My apologies for taking so long to get back to you. You did a great job of making a pocket without accidentally poking a hole in the chicken. I agree that making a pocket is better than butterflying the chicken. I have actually never cooked with balsamic, so if I do cook with it, I will have to remember to not expose it to heat so that the sugars don't burn. Sun dried tomatoes in olive oil, along with fresh mozzarella and basil...wow, so much flavor in the stuffing! Wrapped in bacon, wow! I loved watching you cut into the chicken. So moist...and the stuffing, amazing! Another Food Network Magazine picture perfect recipe, Jeff!

This looks absolutely fantastic, that delicious stuffed inside the chicken, the flavorful sun dried tomato and the fresh basil, the mozarella cheese, soo delicious very tempting, and loved that you marinate the chicken with that flavorful combination of olive oil, balsamic, italian blend herbs, everything you put in there soo good Jeff, it really turned out fabulous, such a perfect juicy chicken, wish it was in front of me now i want it all yum! You got me at Bacon. This is like a twist on the Kiev instead of Ham you used Bacon and I love how you made a slit through the chicken to stuff it with wholesome goodness....The Bacon wrapped around that breast and baked to perfection my mouth is watering. Thank you for another amazing recipe.

This looks spectacular Jeff. I love sundried tomatoes, and mozzarella. Cutting the hole to stuff the chicken is so much better than cutting it in half. I will definitely use that method next time! And wrapping it bacon not only keeps it moist but probably gave it a nice touch of smokiness. Great recipe. Perfect pairing of the Rioja too!

Thank you for the recipe! The sun-dried tomatoes was like little bursts of flavor. I tasted before mixing with mozzarella & didn't care for it. I almost didn't add them in & that would of been a big mistake.
