Ingredients
1-2# Sashimi Grade Salmon
-Salt Mix for every 1# salmon
2and1/2T (30g) Salt
1T (12g) Sugar
1oz Onions sliced
1oz Carrots sliced
1oz Celery sliced
1 cloves Garlic smashed
5 each back peppercorn crushed
Dill, Baby greens, Lemon
Directions
1.Weigh your salmon filet and calculate the amount of Salt Mix needed.
2.Mix all the ingredients for Salt Mix ingredients in a bowl.
3.In a plastic bag, marinade the salmon filet with the salt mix. If there is any liquid from vegetables in the bowl, make sure to put that in the bag too. 4.Marinade for 12hours.
5.After 12 hours, since the salmon filet in ice water very quickly. Pat dry with paper towel.
6.Slice thin and serve with dill, lemon slices and baby greens
