INGREDIENTS:
3kg chuck meat
Kosher salt
Spice mix:
1 cup coriander seeds
1/4 cup coarse pepper
1 tablespoon coarse garlic
1 tablespoon brown sugar
Marinade:
1 cup balsamic vinegar
4 tablespoons Worchestire sauce
A drop of Peri-Peri sauce (optional)

Some recipes leave the salt on with the spices and marinate for 2 days? So may different ideas.

Hi Robert. Correct, there are many different methods. I personally find the biltong too salty if I leave it on. Happy biltong making! 😀

Marinate means you leave the meat in the liquid for 24 hours, not 5 minutes?

I leave it in the liquid for as long as it takes to then add the spices. So just a couple of minutes. And then I marinade with spices etc. for 24 hours.
