Weekend Citron (French Lemon Cake)
Ingredients:
100g(3.5oz) all-purpose flour
5g(0.18oz) baking powder
100g(3.5oz) unsalted butter
2 eggs, beaten
90g(3.2oz) granulated sugar
Zest of 1 lemon
1 tablespoon lemon juice
For the Icing:
90g(3.2oz) powdered sugar
1 tablespoon lemon juice
1 tablespoon water
Preparation:
Bring the unsalted butter to room temperature. Grate the lemon zest. Mix the icing ingredients together. Preheat the oven to 170°C (340°F).
Instructions:
In a bowl, cream the unsalted butter until smooth. Gradually add the granulated sugar in several additions, mixing well after each addition until the mixture is light and fluffy.
Gradually add the beaten eggs in several additions, mixing well after each addition until fully incorporated.
Sift the all-purpose flour and baking powder into the bowl with the butter mixture. Gently fold the flour mixture into the butter mixture until just combined. Add the lemon zest and lemon juice, and mix until just incorporated.
Pour the batter into a parchment-lined baking pan. Bake in the preheated oven at 170°C (340°F) for about 30 minutes, or until a skewer inserted into the center of the cake comes out clean. Remove from the oven and let the cake cool completely on a wire rack.
Once the cake has cooled, drizzle the icing over the top. Let the icing set before serving.
