Stop letting your lemons rot on the counter, and do this next time instead!
As soon as you get them home, wash them, dry them and zest them all. Zest can be stored in the freezer for months! Then once all the lemons are juiced, add that juice into ice cube trays and freeze it as well. It can be defrosted any time to add into salad dressing, soup, smoothies, baking recipes or even just in your morning hot water. Enjoy!

I squeezed all my limes and put the juice in ice cube trays and added a bit of chopped cilantro to each one. Then once frozen I take them out and add a few to hot rice and stir in. It’s delicious!

You can also dry out the zest and store in a small jar. Just put the zest on a pan with parchment paper and bake for 10 minutes at 200 degrees Fahrenheit

Good question! Once they're ripe they can go in the fridge until ready to eat. The ripening process will slow in there. You can also freeze them (remove skin and pits first), but I am not as big of a fan of defrosted avocado.. so I'd only do that if I have A LOT. 😅 Usually, I actually like to store them in the fridge _before_ they get ripe, then they won't ripen all at once!
