While cleaning out the freezer we found several items that needed to be canned. You don't need a proper homestead to start applying homesteading practices in your lifestyle. All you need is the desire to learn. Our local grocery store had pork butts on sale on sale so we grabbed one a while back. Canning isn't something to be scared of just dive in and in time you will be canning everything you can get your hands on. If you're afraid, just give it a go! If you're still got questions, throw them down in the comments, and we'll be happy to share our homesteading knowledge with you.

This Fall I canned Roast Beef cubes, Chicken, Pork roast, pork sausage, Bacon etc., etc. We live in a simple tract home (not homesteading) but we grow all our own veggies, then can them so we can enjoy our, organic fruits & vegetables. It's therapeutic for us (even my husband & grandchildren help with the garden & putting up food) Living on a fixed income it brings me a sense of food security! Thank you for sharing

I cut some of mine in slices and canned in a red mouth jar with onion and garlic and little bit of salt for my husband to use as sandwiches. That's easy thing he can take and eat on his break

I like to brown cubed potatoes, onions and a pepper then add a jar pork and that is our “ hash”.

Howdy Rachel. I watched one of your canning 101 videos where you had acquired 2 tubes of hamburger. I actually watched it several times. I searched and finally found a new presto canner. I taught myself how to do it with the help of youtubers. Went to costco over the weekend and the fish market in Pittsburgh, PA. I got a lot of meat. Did 18 pints today including carrots, beef stew, and just beef. Thank you for the inspiration.

I do as much canning in the winter as summer nowdays. Meats, dried beans, and hominy (I buy it in a dried form from a Mennonite bulk store). Heats the house nicely with the heat off the canner.

I just canned up some pork yesterday with some salt pepper garlic and onion and I plan on using it for tacos as well as adding it to a pot with some sauerkraut for a quick pork and sauerkraut dinner with mashed potatoes. We are from Amish country in Pennsylvania and we love pork and sauerkraut together. I also added some dry rub barbecue seasoning to a batch for barbecue pork for nachos or on baked potatoes or for sandwiches

Well now that I am inspired by watching both meat canning videos I NEED freezer space for our next pig to go in the freezer....so I need to get some other meats canned. I have never done it...so watching you guys do this shows me I can do that! And just maybe we will love the canned meat....thanks!

I love canning brisket , sausage and pot roast . I am in the city but I have a big garden and am a country girl and love everything homemade , started canning a few years ago thankfully before this pandemic hit cause I am food secure and love that feeling ,now to store it all is another story. I grew up on homemade can goods but never learned as a peanut but bought and taught myself thanks to utubers and very grateful for .

I like to using canned pork with my homemade sauerkraut. Also use it to make pork chow mein. Make a roux to thicken broth, add soy sauce and either cooked or drained canned chow mein veggies.

I love canning meat. I just learned how to can in June. I looked through my freezer and I had a couple corned beef briskets in the freezer that I cut up and canned. I can just open up a jar of potatoes and cabbage and I’ve got a meal. I’ve canned roasts and next week I’m canning 5 whole chickens. Canning the thighs, legs, cut the breast off the bones and I’m putting that with the wings to make chicken broth.

Great that you’re getting some canning accomplished! I have my 5 year old granddaughter here visiting from South Carolina and I’m cutting out blocks for a new quilt. I have some apples left that I need to process soon. They’re nagging at me, I just feel like I’m still recovering from Christmas!

I LOVE to put the Pork in a Pan with some Brown Gravy , heat it up and whip up some Mashed Potatoes with a side of Broccoli w-Cheese Sauce , and Pour the Pork n Gravy over the Taters !! SO GOOD !! :) God Bless ya !!

Just butchered and processed my second barrow who was HUGE! Prolly 300 pounds, dressed and my freezers are packed...so the hams are going in jars today! Gonna AI our gilt this weekend to make even more pork! We're raising Berkshires and the meat is just amazing. Best. Bacon. EVER. I've learned to cure and smoke it at home as well. Best get started! Gonna be a busy day...again!

I’ve been canning up a storm myself. Beef, chicken, taco meat, beans etc plus fermenting cabbage and pickle eggs. Agree winter is a great time to can! Pork is great over rice and veggies too! 😋

Split pea soup, scalloped potatoes and ham, ham and bean soup, and ham salad sandwiches. All yummy.

bought four pork butts on sale for buy one get one free., so I cut one of them and seasoned it with cilantro lime seasoning and it was so good shredded for tacos.

Only canned chicken just learning how to do the other meats have a small little acre of land so I have a small garden going I'm learning just the same as anybody else

I’m allergic to beef and pork due to a tick bite disease. I’ve been canning chicken. Usually boneless skinless thighs. Yesterday I got 10 lbs of chicken leg quarters for $6.40 so I’m gonna try to can those. I’ve never done bone-in skin-on before so I’m hoping it goes well lol.

I buy those leg quarters to can also. I just put them in a stock pot of water and cook them then debone it and can. Then I strain the broth and can that too. Turns out great.

In moderation that would be alot of fat, but I am sure it could be mixed in with something, definitely recommend researching raw food diet for dogs to find out how to do it properly

Not a homesteader by any means travel the world with my job !! lived in Czech and Japan but I got a recipe from chef in Italy long story but anyways he gave me his recipe for Bolognese sauce long 3 - 4 hour process and wine ;-) I have been vacuum sealing and freezing them, Because when I do it I make a POT ! takes as much time to make small batch as a big batch. Question I have never canned before will this last as long canning as in Freezer ? Family wont eat any other sauce than this one now. BTW I stumbled on to your Channel and think you guys do a great service !! and fun to watch. Saw you went right by my exit 10 on 96 going to your place up north on one of your videos. Thanks in advance

If not longer, plus you would not be dependent upon power. If you loose power you could loose all your frozen food

Can you can it with the fat on - I love the fat and would fry the fatty bits (with the meat on it still) to make it taste then good then follow your directions for seasoning for canning

The balk canning book has a recipe for using beef tacos, ready made meals, I'm going to try the recipe using pork butt. Anyone have any success using pork in the recipe, which is in the new book?

I would not use fat from within the meat cuts. I use cap fat and leaf fat for our rendered lard. I suppose you could but I think it would have a stronger flavor

I always wonder what the English name for "pork butt" is? Pork loin, leg of pork? I can get boned pork shoulder for a reasonable price atm. I'm trying to can as much meat as possible before it becomes unaffordable, and lamb from local producers.

Pork butt is the lower part of the pork shoulder

@@1870s ah.... we call that joint a shoulder, or when attached to the shoulder and hock a "hand of pork". Thank you for clearing that up. It's a really good cheap cut, as many don't know what to do with it, as cooking skills decline. Good to keep passing on the skills, thanks to the homesteaders like yourselves at 1870.

Please be mindful on tucking or pulling up your sleeves and leaning on your chopping board to be in the shot. I am concerned on cross contaminating your foods, especially that you are storing them long term.
