雪櫃海味炒飯
Dried seafood fried rice
材料:
瑤柱8粒
淡菜10粒
蛋黃6隻
白飯(凍)1大碗
蔥1條(切粒)
處理:
1. 瑤柱,清水沖洗乾淨,清水浸2小時至軟身,保留碗中的水分。
2. 淡菜,清水沖洗乾淨,清水浸2小時,搣去中間的雜質。
烹調:
1. 大火在鑊內燒熱油2湯匙。
2. 放冷飯炒香。
3. 轉中慢火,加入蛋黃炒勻至乾身。
4. 加入蔥粒,炒勻,放碗內,用碟蓋好。
5. 用廚紙抹乾淨鑊,加入油1茶匙。
6. 放淡菜落鑊,轉中慢火,加入清水100毫升,轉大火,冚蓋煮2分鐘。
7. 加入瑤柱連同碗中水分,煮2分鐘。
8. 預備芡汁:
a. 蠔油1湯匙
b. 生抽半湯匙
c. 生粉半湯匙
d. 糖半湯匙
e. 胡椒粉少許
加入清水200毫升,攪勻。
9. 淡菜及瑤柱已煮腍,壓鬆瑤柱,加入芡汁,煮至稠厚。
10. 炒飯倒轉在碟上,瑤柱及淡菜放炒飯上,芡汁倒在碟邊。
11. 完成,可享用。
Dried seafood fried rice
Ingredients:
Dried scallops 8 Nos.
Dried baby mussels 10 Nos.
Egg yolks 6 Nos.
Rice (cold) 1 big bowl
Green onion 1 No. (Diced)
Preparation:
1. Dried scallops, rinse with tap water. Soak in tap water for 2 hours until it turns soft. Retain the water in the bowl.
2. The mussels, rinse with tap water. Soak in tap water for 2 hours. Remove impurities in the middle.
Steps:
1. Heat up 2 tbsp of oil at high flame in wok.
2. Put rice in wok. Fry well.
3. Turn to medium~low flame, add in egg yolks, fry the rice well.
4. Add in green onion cubes, fry well. Put in a bowl. Cover it well.
5. Clean the wok with kitchen towels. Add in 1 tsp of oil.
6. Put mussels in wok. Turn to medium~low flame. Add in 100ml of water. Turn to high flame. Cover up the wok and cook for 2 minutes.
7. Add in dried scallops and water in the bowl. Cook for 2 minutes.
8. Prepare sauce:
a. Oyster sauce 1 tbsp
b. Light soya sauce 0.5 tbsp
c. Tapioca starch 0.5 tbsp
d. Sugar 0.5 tbsp
e. Pepper little
Add in 200ml of water, mix well.
9. Dried mussels and dried scallops have been softly cooked, press scallops well. Add in the sauce. Cook until the sauce turns thick.
10. Put the fried rice on plate. Scallops and mussels are to be put on top of the rice and the sauce alongside the rice.
11. Complete. Serve.
