Easiest way to make flat rice noodles for pad see ew (ผัดซีอิ้ว) using a microwave.

I normally make fresh noodles for pad see ew as it’s a lot easier, better and faster than having to drive all the way to as Asian market near where I live 😄. You can also use a steaming method but you will need to cook each noodle sheet using the steam for 6-8 minute each round. That’s too much work for a busy mom like me. If you have two small children, 2 pets and lots of chores to do around the house, you will understand. I find microwave method to be the best and easiest way for me to make homemade flat rice noodles whenever I want. Please let me know if you know of other ways to make noodles. I would love to give it a try.
You can use this noodles for many noodle dishes such as ผัดซีอิ้ว (Pad See Ew), ก๋วยจั๊บ (Chinese roll noodle soup), Pho noodles, Red curry noodle soup, เย็นตาโฟ (Yen Ta Fo) and many more. I sometimes eat it fresh or just simple add hot chili oil, balanced vegetables, shredded chicken or ground pork, soy sauce, black sweet vinegar topped with fried garlic + picked daikon and chopped onion and cilantro. If I have a chance I will show you how to make easy ก๋วยเตี๋ยวหลอด and ผัดซีอิ้ว one day.

You can make round long rice noodles too, mix 2 cups rice flour and 1/2 cup tapioca or potato or corn starch and enough water to make a watery mixture. Put in non stick skillet and heat on low until rice flour starts clumping. Remove from heat. Stir until smooth with no lumps. Repeat until the mixture thickens. Pour in to pastry bag with medium round tip. Pipe in to boiling oiled and salted water. When cooked the noodles will rise to the surface.

This is by far the best method to make rice noodles. I have tried steaming and pan cooking and the microwave is the easiest and quickest method. The results are tasty and consistent. Requires no special tools and clean up is fast.

It always looks so easy when the professionals do it !!!:( I do get it done (not as pretty) eventually having used all pots and pans in the kitchen as my husband says but will try it because I live in an area where Amazon is my nearest Asian market. Thank you.

I use only 2 tablespoons of Tapioca or it becomes too chewy, but I tried the microwave method and its excellent. After a while I used an upside down plate to cover it, which I think it was better as it keeps steam inside.

I have reviewed like 7 different recipes and not a single one is consistent. Dry to wet measurements makes zero sense and using a steamer I’ve had zero luck trying to make these. Looks like I gotta try with a microwave now and this recipe. Hopefully this works

this looks so good, but I don't have a microwave, I might av eto steam them traditionally, (can I make them at least like an hour or so ahead or will that be a problem, I wonder

I'm not sure where mine went wrong as I followed the steps exactly. I tried 2 different-sized plates but no matter the edges got overcooked and the centers didn't cook all the way. I got some but I lost a lot having to cut all the edges off. Definitely a work in progress.

You might need to find a flat plate. Maybe the center get more rice batter than the edges?

I cannot believe how easy this is, thanks? I find that making them in a microwave causes them to be slightly drier compared to making them in a steamer. The steam makes them more moist and they cook very fast. However, this is my first attempt so I need to try a few more times.

Certainly, I have indeed experimented with it, although not specifically while preparing noodles. However, I am confident that using Himalayan pink or black salt would yield comparable results.

Keep in an air tight container, make sure you have enough vegetable oil coated the noodles before freezing them. Thaw in the refrigerator or kitchen counter before using it.

Are your proportions correct? 2 parts rice flour, 1 part tapioca, 2 parts water, pinch of salt? Doing so the dough is like bread dough, not a slurry.

Hi Sora! Tapioca starch is ideal for flat rice noodles, makes noodles chewier. However, you can use corn starch if you don't have tapioca starch. Let me know if it turns out well :). Have fun!

I've never had that problem before. Maybe your microwave is too strong, causing the chalky texture on the ends. Have you tried cutting off those ends and microwaving it with a little water? The steam might help fix it.

followed video and it just doesn't work for me. was making noodles before using steam and it was good. after 50s in microwave no way I can separate layer from plate even though plate was properly oiled. Used two different plates and the same thing. noodle just sticks and is very gummy, maybe to much tapioca, maybe microwave is too strong, not sure

I blanched the noodles in a boiling water for a few seconds. I sometimes just add them into the broth when I am lazy or want the soup to become a bit thicker.

I made this and I am so disappointed, seems like half a cup of starch is definitely too much, microwave method got them glued to the plate even though I used oil.
