Ingredients (with product number)
4 c. barley flour (FL086)
2 T. ground flax (SE237)
1 T. turbinado sugar (SW033)
1 T. active dry yeast (BP334)
1 tsp. salt (BP066)
2 c. lukewarm water

This was the prophet Muhammads statement food. He used to have barley bread with meat or with soup. I wanted to recreate this dish but didn't know how. So thank you so much for this video it has helped me :) god bless x

Barley reminds me of Ruth, the grandmother of King David, the direct ancestor of Jesus, who gleaned barley fields to feed herslef and her mother-in-law in Bethlehem. Also, Jesus' miracle of feeding 5 thousand people from 5 loaves of barley bread and 2 fishes in Galilee.

I understand why you did not do a bulk proof before the final proof, and this is the method I was using for rice flour bread. However, I discovered that a bulk fermentation in the mixing bowl before placing the bread into the baking pan gave me much better results. This bread may work better if you were to scald 25% of the barley flour with all of the water, in which case you could probably drop the ground flax.

@@loaversdelightbymeenu28 follow the recipe in the video, except…….bring all of the liquid to a boil, and pour it over 25% of the flour. Stir. The scalding will gelatinize the starch in the portion of barley. Allow to cool to body temp, and add the rest of the ingredients and mix. This will make the bread rise higher, and result in a fluffier, softer loaf.

I had done that for barley flatbread boiling water with few tablespoon of barley flour etc , the flat bread came exactly as the tasteless commercial organic thin flat bread (tasteless but at least flexible and soft for dipping just like the store bought ones) but I did it for a person who wants that for his blood sugar.. Have you done this method for this thick loaf? if so does it taste good? would skipping sugar affect it? Thank you..

A very delicious bread! I had some organic barley flour kicking around and wanted to make a 100% barley recipe. The flavour was soooo good! Kind of like malt I added a 1/4 cup of sourdough discard and want experiment using more next time.

Next time, try to pour the boiled water over the barley flour and leave over night and make the same steps as you posted but exclude the salt and see the results.

if you skip salt it is even better, if you do and did not like it, you will be surprise if you just sprinkle a little over the toast it actually taste great (and less salt) you will need 80% less salt if you add it after cooking.. trust me.. but if you get used to do it without salt it is actually great too

On the counter, no more than 7 days. It freezes nicely in a ziplock bag. I like to slice it and freeze so you can take out a slice at a time.

This is a pretty dense bread so depending on the temp in your kitchen, it can take an hour.

You could try baking longer and test with a thermometer for internal temp of 200 degrees Fahrenheit. But I really don’t think the result will be good. It is best to stick with the proper baking temperature.

The recipe was developed for an oven which measures temperature in Farenheit, abreviated F. If you have an oven that tops out at 250°, it will most like measure its temperature in Celsius, abreviated C. That type of oven would need to be set to 175°C..

Chia seeds are a good substitute for eggs, which is what the ground flax is.

You can scald 25-50% of the flour (you will end up needing more water) to pre-gelatinized the starch. If you do this, be sure to allow it to cool below yeast killing temps before adding the yeast.

Thanks for this recipe.had been looking for a 100% barley flour recipe and glad to have found this. Couple of questions though.a) u have mentioned active dry yeast, is it not required to prehydrate / bloom in the warm water instead of being added directly into flour like instant yeast? b) I see there is only single proofing for rise and bulk fermentation is being skipped here, which most loaf breads recipes call for. Is there a reason why this is not required here? Do u think the final product would be different if these above 2 variations were introduced? Also could you post the final measurements of the loaf as against the pan in which you baked? Many thanks

I find that modern dry yeast is highly reliable and does not need to be proofed. You certainly could bloom it in the liquid and sugar if you want to, but will not change the result. That is an old time method to make sure your yeast was active before you waste all the other ingredients by adding them. There is only a single rise because this bread does not have the elasticity of a wheat bread. To do a second rise, you’d mix the batter again and deflate it. I haven’t done it as it is unnecessary and so I cannot guarantee that it would rise as well the second time. Good luck!

I don’t have the final measurements because we’ve already eaten that loaf, but I would say that it is approximately 9” long x 5” wide x 3.5” high.

I cooked it for the recommended time, then wrapped it in foil and cooked it for 2 more hours and it was still wet an doughy in the middle. The crust tastes good but I can't for the life of me understand how such a dense loaf is supposed to properly cook in the time listed.

Happened with me as well. It was doughy in the middle. I used 2 cups of water but it didn’t even wet the entire 4 cups of flour so I added 1 cups more. So May be because of that it was raw in the middle and collapsed. I used 1cup whole wheat and 3 cups barley

You can absolutely add oil! I would suggest 2T coconut oil and reduce the water by that amount. You could also use vegetable or olive if you are comfortable baking with those.

Hey I tried this recipe and it was the worst bread I have ever baked.i don't know where did I go wrong. I followed your recipe exactly except for the cooking part. I don't have oven,I baked it on gas Stove on medium flame for 40-50 mins as mentioned for oven but my bread's upper crust was burnt and it remained raw from inside.🤮 When I was following your recipe I had few doubts in my mind.1- You have used too much barley Flour for a single loaf pan. Generally people do not make bread of more than two cups of whichever flour they prefer. But you've taken 4 cups.. which is too much to go in one single loaf pan. 2. You have mentioned 2 cups of water to bind the ingredients but I thought you used more than 2 cups because after mixing everything up your dough looked quiet sticky and it was on a thinner side. While mine looked like a kneaded pizza dough. I added two cups of water in 4 cups of flour as mentioned in the video which is basically less in proportion wise . Rest everything I had measured and added because I'm that particular. Still my bread was a complete failure and I don't know what to do with that now as I'm against of throwing any food. Can you please help me what went wrong.. should I give another try? What will be the cooking procedure as I don't have oven. Your bread looks like a bakery one .

Im sorry it didn’t work out for you, but I would not expect it to work on the stovetop. It really needs an oven to have the heat all around and consistent temperature.

I had the same results inside an oven. I am in a new home and first trial of the oven so I blamed the oven! But also stiff dry hard to blend dough well above rim before raising. I may have under raised due to excess quantity. Proportions definitely off and reading this now, perhaps the oven and I were not the errors. Can anyone tell why this recipe failed for me or please please please share one that works!!!!?

to make any bread on a a stovetop u cannot use a loaf pan. u have to use a larger flat surface and spread out the dough like in a frying pan and make sure the height of the dough is not over two inches, rise the dough first of course and then put it in the large greased flat pan. put a secure lid on it and cook it on LOW heat for about 45 50 minutes to an hour. look up frying pan bread on yt.
