This delicious pasta dish might be the most comforting meal there is. It's cheesy, tomatoey and loaded with "meaty" vegan sausage. Yum yum yum.
Ingredients:
1 tbsp olive oil
6 vegan sausages (approx 500g)
2 banana shallots
3 cloves garlic
15g fresh basil
½ tsp oregano
3 sprigs thyme
400g tin chopped tomatoes
200g passata
1 tbsp tomato puree
200ml oat cream
30g vegan parmesan
Salt, pepper and sugar to taste
400g rigatoni pasta
Before You Start
Kettle boiled
Method
Prepare the ingredients | Peel and finely slice the shallots | Peel and grate the garlic | Pick the basil leaves and finely chop the stalks | Grate the vegan parmesan
Make the Sauce | Warm the olive oil in the large saucepan over medium heat | Crumble the vegan sausages into the pan and stir for 2-3 minutes | Add the shallots to the pan and stir for 2 minutes | Add the garlic, basil stalks, oregano and thyme to the pan and stir for 1 minutes | Add the chopped tomatoes, passata and tomato puree to the pan and stir to combine | Turn the heat down to a gentle simmer
Make the pasta | Pour the boiling water into a large pan | Add a big pinch of salt | Pour in the rigatoni and cook according to the package instructions (approx 9-11 mins)
Finish the sauce | When the pasta is 3 minutes from ready, add the oat cream to the sauce, stir to combine and turn up the heat | Taste the sauce and season with salt, pepper and sugar
Combine the elements and serve | Drain the pasta and add to the pan | Sprinkle over the vegan parmesan (saving some for garnish) and fold everything together | Spoon the Easy Cheesy Sausage Rigatoni into serving bowls, garnish with vegan parmesan, pepper, fresh basil leaves and serve immediately
