Why do you take the skins off the tomatoes? That's where most of the vitamins are. I chop mine and then use them in soup, goulash, meatloaf and Spanish rice. I'm on a fixed income and any tomatoes or bell peppers I can get from the food pantry I freeze. I'm so thankful to get them. By freezing them I can have them ready to cook with when I can't afford to buy them 😊👍 love your videos. Thank you for sharing your tips 👏👏👏👏🙋

this week I was smothering a small pot of our snap beans with onions, garlic and ham and I had a bunch of cherry tomatoes so I cut up a few and cooked them down with the beans. maybe that's common but it was pretty good stuff

thanks for the info...you're a wealth of useful information. we run our peppers thru a small food processor, then fill an ice cube tray add a little water, freeze them, then pop into zip lock bag. When we cook we just grab a couple of cubes. great for onions also. Makes preparing a meal a snap

You could probably use a small metal measuring spoon to scoop out the inside as well. Might already have one on hand.

I have 4 gallon freezer bags filled with grape (and some cherry) tomatoes! I had no idea I could core them and peel so easily using this method so they all have their peels...which isn't too big of a deal for stews/soups. Now I know! Thank you!

Another great video, Reaganite. You have such an easy going way about you that is fun to listen to. I love to freeze tomatoes this way - makes it soooo easy to deal with later. I've also just halved peppers, seeded them and frozen them halved as well. Can't wait to get enough tomatoes and peppers to make some of your fire roasted salsa. Looking forward to the video

Yes - I did! So glad you tried it! Unfortunately my dog dug up two of the romaines I planted in the soil, and the other one has bolted due to the 100 degree temps we've been having. I didn't get it shaded in time. Hope you have better luck with yours!

A cheap way to vacuum seal a bag. To get the air out of the plastic bag after you fill it. I get a deep pot and fill it with water, then I close the zip lock part leaving just the corner open a little bit. Then I submerge the plastic bag in the water, the water will force the air out of the bag and then I close it.

Just tried this technique and it works great! I did find out that it works best on fully ripe tomatoes than ones that still had some green to them. Mine were cherries, but larger varieties: Big Boy and Supersonic. Looking for all my tomatoes to ripen so I can get onto canning sauce!

great video. thanks. i would love recipes using these tomatoes. i have just been trying to use them for salads and i end up having to put in the fridge and you are right it turns to water not too tasty.

You can also stick a straw in the zip lock bag and suck the air out of it. Almost like a vacuum seal. Love the videos!

Greetings from Southern California., I'm a new subscriber. Tomatoes are coming in like crazy and I had a bunch on the counter. I was about to cry thinking how I was going to eat them all before they went bad. I'm so glad I came upon yout site. My tomatoes are now happy in the freezer waiting to become a terrific sauce later. Do you have an tips for saving persimmons. My tree is already loaded and should come into season in October. Thank you.

Frozen veggies like tomatos, peppers, carrots, fresh string-beans, sometimes onions and garlic, I take out and shred them on a grater for salads or soups, including ramen type noodles. When they are finely chopped or shredded, espeically the onions like an "onion snow powder", they taste different, usually sweeter as for carrots, and you don't have to eat "chunks" of veggies.

Just a little tip.. when trying to get out all the air from a freezer bag, I seal all but the corner then use a straw or just use your mouth and suck that air out! works great!

Another cheap vacuum seal technique; zip the bag as you did leaving a small opening, stick a straw in the opening. Hold straw in your teeth. When finished removing air, pull out straw and seal opening. Works great on items like bread and muffins that you cannot roll up. So many resealable bags these days, just make sure you don't have straw too close to food that you inhale some! Lol. Can't wait to learn how to make salsa!

I think I'm going to pot them in some mini clay pots and keep them indoors this summer under the UV grow lights (on 24hrs a day) in the kitchen and see how they do.

You don't have to prior to freezing. I was just showing how easy it is to take them off after you freeze them for when you stew or can with them later.

So, after they're flash frozen and you remove the skins, do you put them back in the bag to freeze? Or were you just showing us how to take the skin of the tomatoes before we use them ?? This wasn't clear to me. thanks

I don't know why not, for short term storage. I would be concerned about the high water content and expanding from freezing messing up the texture though. Give it a try on one and let me know what your results are. 😉🤙

Freeze them on a cookie sheet first b4 you throw them in freezr bags and then it is eaiser to take out what you want without them sticking together.

Use gloves to scrape those hot pepper seeds out. Get that "heat" under your thumb nail and it BURNS. Rubbing alcohol eases the pain. Obviously, don't get the rubbing alcohol on anything you will eat.

You should blamch them before you freeze to destroy the ripening enzymes. They will last much longer in the freezer and maintain their flavor and nutritional value.
