Delicious and easy Chicken Quinoa Bowl Recipe with baked sweet potato.
Recipe for two persons.
Ingredients:
1. Chicken breasts - 2x200gm
2. Quinoa - 150gm
3. Sweet potato - 1x300gm
For Chicken breast marination:
4. Curry powder - 4 tbsp.
5.Garlic powder - 1 tsp.
6. Red chili powder - just a pinch
7. Salt to taste
8. Black pepper to taste
9. Lemon juice - 2 tbsp.
11. Vegetable oil - 1 tbsp.
For Chicken breast grill:
12. Vegetable oil - 2 tbsp.
For Quinoa sauté:
13. Olive oil - 2 tbsp.
14. Diced Onion - ¼ cup
15. Diced carrots - ¼ cup
16. Diced celery - ¼ cup
17. Chopped spring onion - 2 tbsp.
18. Green peas - ¼ cup
19. Diced yellow/red paprika - ¼ cup
20. Boiled quinoa
21. Salt to taste
For baking sweet potato:
