Yields : about 252g mascarpone cheese
▷Ingredients
400g . . ☆Whipping cream (38% milk fat)
15g . . . Lemon juice
☆Use cream with at least 35% milk fat
▷Refrigerate for 24 hours and strain out the whey. You will likely find the cheese in the cheesecloth to be a bit thicker and denser around the edges and the center is too thin. Turn it over and drain a bit more
