That way for Katsu is very tasty. Have you ever tried it with a bit of ham inside? It is "Cordon bleu", I just prefer it with chicken. Traditionally you would use pork or veal. I can imagine you might like it even if it is more Western than Japanese! :) Thanks again for the amazing recipes!

The fried chicken tender with mayo and Panko looks yummy. Will try this but, I need to get to the closest Asian market (45 minutes away). A lot of products are not available in our small Pennsylvania town. I feel like I have mastered Tempura (with seltzer)...Yummy!

That part of the chicken has many nicknames. It's most often called Chicken Tenders in the USA, but another common one is "Chicken Fingers" - it varies by region.
There is also Mitsuwa in Chicago! I went several times with my classmate when I lived there. I hope you can go one day. (I post about England a lot, but I'm an American who lives in England.) I made tempura a long time ago, it has been too long I think. I saw a video in Japan about using bananas in tempura, from a Japanese lady who lived in Indonesia (?).
