Ingredients
Crust
1 1/2 cup all-purpose flour
1/2 tsp salt
1 stick unsalted butter, chilled and cut into small pieces
4-5 tbsp ice cold water
Filling
500g Ground beef
1 medium onion diced
4 cloves garlic (i love my garlic)
fresh thyme
3 - 4 tbsp olive oil
Salt and freshly ground black pepper
1 egg, beaten For brushing (optional)
1 tbsn tomato puree
1. Prepare the crust. In a medium bowl whisk flour with salt. Incorporate butter using your hands, a fork or a pastry processor, until crumbs are formed. Add water and stir until incorporated.
2. Meanwhile prepare the filling. Heat oil in a pan over medium-high heat. Add ground beef and cook for about 5 minutes or until browned
3. Add onions and garlic and cook about 10-15 minutes stirring.
4. Add tomatoes and carrots and stir until well incoperated
5. Add the tomato paste and mix it in
6.Now add your beef stock and reduce heat to let it simmer.
you can thicken with corn starch
7. Add the peas at the last stage when you are about to bake.
PREHEAT OVEN TO 390F
8. On a lightly floured surface roll each piece of dough into a circle. (do not mind the uneven edges)
10. Spread the mince over each the dough leaving (2cm) around the edge.
11. Fold dough over the filling. Brush with beaten egg.
13. Bake for about 30 minutes until slightly golden.
Sprinkle with some chopped parsley and serve
