Full fat Coconut milk or regular plant milk thickened with corn starch or other thickeners make amazing cream sauces. But cashews are my favorite way to make it because they kind of have that nutty cheese flavor
For this, I wouldn't really recommend using the flour. Full fat coconut milk would probably work great on it's own. I feel that in dishes like this the coconut flavor kind of disappears. The cashews are perfect for this dish, though. They add a nice cream flavor without taking over, and I agree that the nuttiness does help with the cheesy flavor. Thanks for watching!

I make a similar dish pretty often as it reminds me of home, if you don't have cashews, you can always make a quick roux and mix in 50/50 soy milk/veg broth with the addition of nutritional yeast, and it thickens up quite nice.
Honestly, I don't think this dish would even need the flour. The residual starch on the potatoes thickens things up really well. But yeah, if you can't or don't want to do cashews, then sub them out for your plant milk of choice. Thanks!

A few years ago I bought a mandolin and I knew I had to be extremely careful but I cut myself anyway. Got rid of it immediately. I didn't know there was such a thing as a glove like that. Lucky for me I don't mind chopping. I rather enjoy it. 👍 Great video!
The gloves are a game changer, and they're really reasonably priced. I think I bought a pair of 2 for like $11. Check Amazon or places like Sur La Table. They're very worth it.

They are not inexpensive, that's for sure. This recipe only calls for a 1/2 cup, so it'll help that pound go a long way. You could also just use unsweetened soy milk or almond milk instead of the cashew and water mixture. The starch in the potatoes is what does most of the thickening. You could even make "Gratin Savoyard", which just uses all broth instead of any creamy element.
I haven't tried white beans in this particular recipe, but I bet it would work as well. Just replace the 1/2 cup of cashews with a 1/2 cup of white beans and proceed as normal.
I did this recipe and it turned out fantastic! I omitted the oil because I eat the healthy version which is whole food plant-based vegan and it still tasted delicious, without oil.

First of all, congrats on 33,000 subscribers! 👏 When I started following you, we were just a few hundred! I finally got around to making this dish today, really yummy! True to myself, I was unable to follow even this simple recipe without tweaking it 🙈 Had to make it in a casserole plate as I have no oven safe pan. As you said, no problem at all. Not enough cashews, mixed in some pine nuts, also delicious. Added some Dijon to the sauce, and some sautéed mushrooms about half ways. Whole family of five were extremely satisfied with this dish, now added to our rotation of recipes. Thank you. For another great recipe, and for all the love and effort you put into your videos. Saving this for when/if the weather ever turns cooler. I don't think I had this dish non-vegan, but you made it look delicious. I am guessing miso paste would be a suitable alt to the bouillon? I like to try as close to the original recipe b4 I start messing with it too much... haha, although I do translate most things from "regular" to gluten free and veg. Thank you for doing what you do. You have have helped make quarantine and isolation more tolerable.
Good plan! You could use any type of vegetable broth you would like to make this. Miso would probably work, although I haven't tried it. One thing to note is that potatoes require quite a bit of salt, so whatever you use, just make sure you check to make sure that there's enough of it. If you do try it with miso, let me know how it turns out!

Yay! So glad you enjoyed the dish! I'm all about posh but easy. Ben is normally behind the camera, but he does get in front of the camera for taste test videos. We did an ice cream one a couple of weeks ago, even. He's my partner (on an off camera) of 6 years.
I don't know about the oats in this... Cooking with homemade oat milk has always turned out gummy and weird for me. I will support the use of coconut milk, though. Use that in place of the cashew and water mixture and I think you're in business.

Let me make a pitch that you try hemp hearts some day to make sauce. Or a parm cheese substitute. They're better for you and have a unique no-oil "mouth feel." The only down side is they have green flecks in them. Still though, I think you'll like them.
I'm definitely a fan of hemp hearts. I think you could definitely sub them in for the cashews here. The green goes away when blended, so you would never know in this dish. Next time I have some on hand, I'll give them a try. Thanks for the tip.

Thanks! Yup. The stovetop really helps it to cook a lot faster. It would be good with anything you would serve potatoes alongside. As a vegan, I find it difficult to compose a meal the same way that one would if I were composing a meat-centered meal. I think this, with a really nice salad, and maybe even some tofu or vegan chicken-style nuggets.
There are some great lentil loaf recipes, you can add vegan ground "beef", there are meatless meatballs in the market and I think the mint/dill/parsley just works especially well for homemade bean burgers for protein. I like to fry tofu in chunks with cornstarch and lots of spicy seasonings and really press with the spatula so it takes lots of colour and creates a crust. I think a colourful warm salad would work really well (like beetroots and greens)

Um , they were selling the hand guards before with the Mandolins back in the 1980s. I cringe watching , maybe another guard to make to use , maybe those fine Metal mesh gloves too . 🧤 🩷😊🤍 I didnt know Better than Bouillon was Vegan , good to know . I use to use that product to make Gravy when Vegetarian + For Thanksgivings or for Special occasion because It was pricy . The Scallop Potatoes look too good , a lot of inspiration for that ... Made this without mandolin. Also mixed vegetable stock with cashews at the blender stage. It all came out great and crispy on my iron cast pan. Perfect and delicious.

Yesterday, I saw someone who heats the onions in lemon juice instead of oil. I thought that was interesting, particularly for a cheese sauce where a little tangy flavor might work.
I know that soaking onions in garlic in lemon juice kind of "cooks" away the raw spiciness of them. Not sure about heating the lemon juice... interesting idea.
@@MonsonMadeThis Hmmm, that is interesting. People use broth or water for cooking them. That was the first time I saw lemon. I have seen vegan cheeze with apple cider vinegar and/or lemon in it. I think the cauliflower cheeze I eat sometimes has both of those in it.
Do you need to soak the cashews before you blend it? I’ve always seen recipes where they say you have to do that but if you don’t that makes it so much easier!! Thanks for this recipe I can’t wait to try it.
It all depends on your blender. If you have an older, standard blender, then soaking them will help them blend better. If you have a high-speed blender like a Vitamix or even a NutriBullet, then you don't really need to.

It works so well. I also have a video from a few weeks ago where I make a "sausagey" gravy using cashews. They thicken up the sauce without any flour at all. It's magic!
Thank you. It can definitely be made with more "humble" ingredients if that's what you've go to work with. As long as you have potatoes and liquid, the dish will work. Season to taste.
I put really hot liquid in the regular cup once, and the pressure exploded the blade. I had to buy a new one on Amazon, and so I decided to buy one in a kit that came with a smaller cup. I didn't know that they existed before then. Get one!
