I made this! Over the weekend we had family here. I made the Irish Stew and got rave reviews. Two modifications to the recipe 1) added 1/4 cup dried porcini mushroom powder and about 2 cups of dry Soy Curls - broken into bite size pieces. Love how much this makes! Leftovers this week will be devoured! Thanks Dillon!

I'm pretty much completely addicted to this channel. Vegan since 2014 and it's been annoying and difficult at times particularly when I'm starving and ill-prepared which was pretty much always. Your videos have made my life actually doable. Thank you so much! Love from your neighbor in Tucson ☀😎🌵

I love a nice wholesome chunky stew and interestingly Friedrich Engels (of Marx and Engels fame) loved Irish Stew but his partner who he never married was an Irish woman.

I just made this and it was fantastic! Added garlic, and turnips instead of parsnips, yippy yay! It went perfect with homemade whole wheat bread for a winter meal for me and my husband (who I am trying to convert). He loved it but added salmon 😢. Anyhoo what a great recipe to have in the toolbox!! 🥘🥔🍠🥕

I saw this video like 1.5 hours ago. I watched it. Memorised it and went to the shop and got the ingredients. I also added peas and leaks. For my vegan allergic husband I added one table spoon of dijon mustard and lea and perrins Worcestershire sauce (not sure if there is oil in these so if you are sos then leave them out just to be sure). I have a huge pan on the stove which will do me for the week. Lunch and dinner - done!

I use your cheese sauce and mushroom gravy mix as a soup base all the time, so good, I don't measure just chunk up my veggies add water and then the cheese sauce or gravy mix into the instant pot and set it for 10 minutes on high with a natural release...so yummy

Your videos always bring SO much joy to my day! You make them fun, interesting, and fill them full of useful tips and tricks. You aren't "precious" about your food (ie: it doesn't have to be perfect), and the way you describe your recipes as being "forgiving" is so encouraging. And your little edits literally make me laugh out loud (the leprechaun head at the beginning, and "don't be afraid of the knife" 🤣), I always rewind and rewatch those little gems, what a treat! Made it, but without tomato paste as I find it makes everything taste like ministrone to me. Came out great. Added the recipe to my recipe book.

I make a similar stew with veggie no beef broth and thicken it with rice flour. I put in a bay leaf and sprigs of fresh or frozen thyme that I pull out at the end. I also stir in frozen peas at the end. They add color and cool the stew a bit so I can eat it right away. Best winter meal. I live in Flagstaff. Still cold up here...

My kids and I love watching Dillon when he eats and says everything is hot, hot, hot… We pretend we’re Dillon when we take the first bite when we cook. 🤣 We love the videos and use many of the recipes throughout the week. We will definitely try this one!

Looks delicious. Caused me to order some of your products. As far as the "overkill to worry about" the extra nutrition. People coming from things like cancer get healed by extra nutrition. And get their eyesight back from it. Most plant-based eaters don't have to worry but people who have illnesses often do better with extra nutrition.

I had uterine cancer 6 years ago, after lots of research I went whole food plant based no oil after surgery. 6 years cancer free and much healthier now.

@@shelleydeguzman1959 Yeah, a lot of people get healed. I am saying that one author who looked at people who went into spontaneous remission, ironically, the number 1 thing they all did was ingesting herbs.

It’s on my stovetop now, simmering. I didn’t have the parsnips, so I added a sweet potato that has been looking up at me for weeks, saying, “Cook me”. I also added a block of those brown rice Lotus noodles from Costcos. No red star on it here, as they sell a ton of them in my location. I made sure NOT to turn it into a soup by adding too much water, and your cadence of “It’s easier to add water than to take it out” was playing in my head.

I really enjoyed Dylan's funny way of cooking there's a lot of cuts in his videos now would be nice to see it a bit slower. Hard on the eyes to see it skip so much.I have been watching for along time. Really love his cooking,and his jokes. 😁

I have ordered all the ingredients and a Dutch Oven, making this on Saturday. How many servings did you get? I figuered about 4 to 6. I even put the recipe into Cronometer and its about 1000 for the entire recipe

@@WellYourWorld my Dutch Oven arrived and my ingredients from InstaCart get here this morning. The only thing I am going to do different is saute the mirepoix and then add the spices and cook them for a minute then I'll add the broth, Potatoes, Mushroom and Parsnips. Cannot wait to taste this. By the way for not being a trained chef, your knife skills are darn good!!!

OMG you made my day because I was getting bored with what to make tomorrow and I have baby bellas, 3 yukons, mire poix and parsley on hand. No parsnips but I may add frozen peas in, after the blending. I love your easy pot-dump meals because they are as good as they are easy. I sometimes play around with fennel powder or smoked paprika in my bowl [not pot] to see if it takes on a meaty memory taste. Thanks Dillon. 💕
