There's a tonne of Brisket Tutorials out there, but thank you for choosing to fly with us!
After much testing and learning the ways of the Brisket over many years, here's my attempt at sharing my techniques with you all.
While I'm using my Masterbuilt 800 here, it's worth noting these techniques will translate to other smoker/bbq's too. I've had many subscribers get in touch sharing their brilliant results following this recipe.
This will also work on smaller cuts, but they can be a bit drier due to there not being as much thickness and marbling.
As you'll see and read, a bit of forward planning goes a long way here, but if you break the steps down it's a pretty fuss free technique and one that I and my mates have successfully proven many times over. The best thing about doing it this way is there is no need to get up in the middle of the night for any checks - simply get it on by 2200 and say good night!

@@aussiedavecooks Did one a couple of years ago in the Weber. 10 hour cook using the Snake method. Line the coals up 2 or 3 high around the base and light one end and it's off like a slow fuse. Otherwise similar process to yours with wrapping and dry rub.
