This recipe is sooooo delicious and EASY! I love egg rolls! (Who doesn’t?) When I saw this recipe, I knew we had to try it! It comes together so quickly and my husband loved it so much he had 3 bowls for dinner! This should be on your regular rotation. It’s inexpensive, quick and easy and so yummy! This is a MUST try! Plus it’s a Weight Watchers recipe!
Egg Roll Bowls
Avocado cooking spray
1lb uncooked ground pork (You could use chicken, turkey or beef)
5 large scallions
2-3 large cloves of garlic
1-2 Tbsp of fresh minced fresh ginger
3 Tbsp Soy Sauce
2 Tbsp unseasoned rice vinegar
1 Tbsp apricot preserves
1Tbsp toasted sesame oil
5-6 cups shredded cabbage
1-2 cups chopped carrots
or you can use coleslaw mix)
1. Coat a medium skillet with cooking spray. (I used avocado oil spray) and heat over medium-high heat. Add pork, scallions, garlic and ginger and saute, breaking up meat, until pork is cooked through and no longer pink. 7-8 minutes (If using fresh carrots throw them in too)
2. Stir in soy sauce, rice vinegar, jam and sesame oil.
3. Add in the cabbage and stir a few times until the cabbage is cooked. 4-5 minutes more.
Serve over rice.
