[Eng-Recipe] How to make peanut mochi (花生糯米糍)

糯米糍皮材料:糯米粉140g、粘米粉12g、即食吉士粉10g、砂糖60g、脫脂牛奶200g、椰漿(或椰奶)200g、菜油(或沙拉油)1湯匙
內饀材料:花生碎100g、砂糖20g、芝蔴10g、椰絲20g全部混合拌勻。(以上饀料可依個人喜好增多或減少)
將牛奶、椰漿、糖、油倒入鍋中用中火煮至微滾起泡,慢慢倒入粉盆中(各粉類已篩過拌勻)用膠刮攪成粉糰倒入已掃油之碟中,用大火蒸約18至20分鐘,取出待凉。
將粉糰分成約16份,壓平包入饀料後灑上少許椰絲或糕粉(糯米粉用白鑊小火炒至微黃便成糕粉)
To make the mochi skin you need:
• 140g Glutinous rice flour
• 12g Rice flour
• 10g Instant custard powder
• 60g Sugar
• 200g Skimmed milk
• 200g Coconut milk
• 1 tablespoon Vegetable oil (or salad oil)
Sift the glutinous rice flour, rice flour and instant custard powder into a mixing bowl.
In a small pan mix the sugar, milk, coconut milk and oil and simmer on medium heat until slight boil.
Add the milk mixture slowly into the flour mix and mix well. This should create a paste like dough. Place the dough on a greased bowl to steam on top of some boiling water on high heat for 18-20 minutes.
Take out the pan with the dough and let it cool.
Once cool, split the dough into 16 even parts and can then roll out to be filled with mochi filling.
To make the mochi filling you need:
• 100g Chopped peanuts
• 20g Sugar
• 10g Sesame seeds
• 20g Desiccated coconut
(the amount of each ingredient can be changed according to personal preference)
Mix the ingredients together well and use as the filling for the mochi. (As shown in the video, the ingredients can be used to make different kinds of mochi)

This is one of the best mochi recipes I have seen made. It must be very delicious. I have eaten a few different flavours of mochi. They were all delicious! I will have to make this one. This looks really tasty!

140 gm glutinous rice flour, 12 g rice flour, 10 g custard powder, 60 g sugar, 200 g milk, 200 g coconut milk, 1 Table spoons oil. Filling -- 100 toasted peanut-- pounded, 20 g castor sugar, 10 g toasted sesame seeds, slightly crushed, 20 g coconut flakes. The Hakka use pan fried glutinous rice flour for the coating. I wonder why she used rice flour and custard powder.

rice flour makes it a bit stiffy not too soft,custard powder got a mild nice fragrance like british enjoy custard milk or custard sauce over certain cakes

ms siu I success making 年糕 follow your receipe as your explaination is clear to understand many friends say very nice First time i use 150g glutinous rice flour & 30g wheat flour n 150g water after making then realise flour wrongly use but after fried with egg then realise 很好吃 although wrong flour 2nd time i use 500g glutinous rice flour 100g rice flour n 500g water brown sugar the taste also 很好吃 Thank you so much for your receipe again

Hi! Just wondering...If 沾米粉 = 糯米粉? If I am not mistaken, glutinous rice flour = 糯米粉 while 沾米分 = rice flour. Which one is used in the recipe? The recipe in Chinese stated 沾米粉 Recipe in English stated Glutinous rice flour instead. Please advise. :) I love your recipes, thank u for sharing!!! :)

你可以將糯米粉用10g-20g改用可可粉、糖加多少少(因可可粉有苦味)其他ㄧ樣做法,包入麥提莎便成。 芒果都是用花生糯米糍的皮,包入芒果粒便成(好好味架)^^ 希望幚到你

If you store it in the refrigerator in an air tight container it can be kept for about a week.

Hi,做擂沙湯丸有少少唔同做法,唔需要咁煩覆,只須搓普通湯丸包入饀,煮熱後襯熱碌上黃豆粉或花生粉就可以了!

Hello Suki, can u please convert Gram to Ml, u said everything in gram, but milk, coconut milk are in liquids, is the volumes of liquids that I m looking for, sorry I can't write Chinese. hmm, im not sure where in the states you can buy custard powder, but I think most supermarkets and baking supply stores will have this, try looking in those shops. Hope this helps.^^

did anyone who watched this and followed the recipe get success? i cant get past the adding wet ingredients to dry part... mine keeps turning into total soupy goop and not thickening into a dough, even after adding double.. triple.. the dry ingredients to the same amount of wet listed above. what brands did you use specifically for this recipe? maybe thats my problem...

Mandi T I am not sure why that is. I use a fair few brands but I tend to buy them at a chinese supermarket. Do you leave the paste to cool down before you wrap it? when it is too hot it does feel very gloopy and not dough like.

Tina Tan Hello that is sad to hear, Is your coconut milk all water? Some brands only have the milk and no puree (the one in the recipe have puree) in recent time I have found some brands call it coconut cream now. I hope it works out next time.

grounded peanut can buy from market in pkg, (already take out brown hard cell), than fried with dry pan...& pound to the size u want, even power form...

如果浄用糯米粉蒸熟後會好黐手,加少少粘米粉可以中和ㄧ下,不過如果唔想加,全用糯米粉也可以!

I put a cup on the scales and set it to grams, Then pour the specific amount also 1000 Grams is about a liter. Hope this helps. Siu Kitchen

If you dont add the rice flour it will become very sticky. once you add the rice flour it is a lot easier to handle but it is possible to make it without the rice flour. ^^

roger cheung 有時都要看室溫而定,室溫和暖及濕度高的話,糖就會比較快溶化。若吃不完可用保鮮盒放雪櫃保存,糖就不易溶化啊。

Can I use corn starch or potato starch for the outside coating?

laura wong unfortunately you cannot.both corn starch and potato starch will make the mochi taste and feel strange. you can use glutinous rice flour, using a really low heat, heat until it is really light yellow in colour and use that instead.

Hello, yes you can keep this for up to three days if you keep it in a covered container in the refridgerator or covered with cling film :)

It is not the same in my opinion. however, if you wanted to use coconut paste I would suggest that you dilute it with a little milk/water. Hope this helps :)
