Guga introduced me to Picanha 😅. I order all four different Japanese A5 rump caps from Osawa to actually test the difference. I was pleasantly surprised that they were 😁

Rump Cap is affordable, good for when economy is bad, like now. Slice thin is the way, very usable for not just Yakiniku, but also for Korean Bulgogi, which is what I eat today with the Ozaki Wagyu. Thank you Mr. Osawa for the guidance cutting method. Please update all different cuts soon, I am looking forward to it.

slice thin is not the way for rump cap, steak or roast is the way. you can use tougher and cheaper cuts if you want to slice thin such as round or brisket

What is the Marble score of the Wagyu Rump Cap's you cut up? They both look to be around a MBS 5/6?

Guga would not be impressed. Against the grain for rotisserie picanha style, with the grain for steaks.
