If there is a dish that I could only choose for the rest of my life…it’s THIS RECIPE. It’s my Rigatoni Carbonara…and the key to a good Carbonara dish is to get the pork belly or pancetta really nice and crisp. And we’ll be using Swanson Chicken Broth for this recipe because it’s important not to over-season your food and let the flavors shine!

That's some delicious stuff man! I love traditional Italian cuisine, but I definitely do not mind interesting variations. If it's tasty, that's all it matters.

Tough crowd in the comment section, jeez. Obviously, Fabio is doing his own version of carbonara, doesn’t always have to be so traditional, you can mix it up a bit.

Right? People are always so eager to be fashionably outraged. The whole point of the series - which Fabio literally says at the beginning of each video- is “Italian food with a twist.” I guess the purists don’t comprehend language very well.

Carbonara uses egg yolk, the water from the pasta, and cheese. The end. No cream.

I use broccoli and sometimes shave a little carrot into it, the kiddos love it. Play around and add spinach...kale...whatever you like.

This looked fantastic. My Italian friends would freak out seeing veggies or cream near carbonara , but I'd still try this.

Steve Malczewski Looked like it had like an, idk... stone texture inside, tho. Pretty neat. Also, seemed like more along the lines of a deeper stir-fry type, than a skillet/saute. ? Whatever it is, I noticed it too.... & was wondering the same! :) Be well.

Have watched & enjoyed Fabio since wayyyyy back when. (was prob. one of the first subscribers here, too) That said, while I do appreciate the content, please get into the beginning of the video (& into the description box) that it's "sponsored by Bialetti & Swanson". I did like that he left in that oopsie w/ the egg yolk. Was a close call nearly putting the 3rd white right into the yolks, but phew.. Love whatever that deep stir-fry pan is... looked like it was coated on the inside w/ stone? The finished dish looked absolutely deeeeeelish! Thanks for sharing & take care from Chicago!

Gordan Ramsay as well as Marco Pierre White almost never make any dish traditional. Talented chefs sometimes put a spin on things ...not a big deal. Looks very good.

Brandon Mobley because even though his food looks good and he does good videos - he is mislabeling his content. This is not an authentic traditional Carbonara... not even close.

"Important not to over-season your food" (salts pancetta and adds broth). Broth and cream in carbonara... Real chefs sauté forward because they won't mess up their clothes... What a poser...

This is completley disrespectful in every way - you have managed to BUTCHER a traditional Italian recipe. Brussels Sprouts? Cream? This is not even CLOSE to being a real carbonara. Not even your accent is real. Sorry - I’m don’t like to make negative comments but I can’t say I’m not insulted by this monstrosity. Look man - honestly? It looks good, congrats because you know how to invent a dish or two, but that’s what this is, an INVENTION. I wanted to write this comment to make sure people don’t fall into this trap and believe this is a traditional carbonara.

@@GiGi-rb4qg Egg (some would only use the yolk), cheese (either Parmigiano Reggiano, Pecorino Romano or both), guanciale, black pepper, your short pasta of choice (rigatoni does work wonderfully)

@@levischorpioen Thank you! Now if I could find some of the cheese in stores that are somewhat close to me, there's always that package crap but I actually found a decent ricotta and parmesan. We have Asian and Mexican food stores all over but nothing else!! Hmmm maybe I should open one, who doesn't love Italian?! Thanks again! HUGS
