Dough: 175g high-gluten flour, 75g low-gluten flour, 30g sugar, 3g salt, 8g milk powder, 50g iced whole eggs, about 90g iced water, 2.5g high-sugar resistant dry yeast, 30g butter
Taro filling: 300g Lipu taro, 6g purple sweet potato starch, 14g condensed milk, 18g sugar, 36g light cream, 130g milk, 18g butter
