I do not understand why every Indian outside of India eats beef, but in India they go nuts over cows. This is especially strange given how sophisticated every Indian person I have ever met is.

Gave the butter idea a shot and it was delicious. Also tried its immediate cousin, brown butter. That stuff is like crack! I put it on some grilled veggies and it was terrific. Give it a go...

Love the butter idea. I usually cook my steak sous vide and sear it when I'm ready to eat. But I always end up obsessing over some sort of pan sauce or the other which somehow never ends up to my satisfaction. But the idea of a herb butter is brilliant! It's simple and with the variety of herbs available here, the possibilities are endless. Thanks dude. Just picked up a ribeye this afternoon. Will also dry age it like you did. Cheers!

Oh yummy!! Also I have the same problem, the pan sauce just doesn't cut it. Do you use a machine for the sous vide or just water and a zip lock?

I have 2 sous vide immersion circulators. How's that for commitment!? I use the Anova for long duration cooking (ribs, roasts, pork shoulder, etc.) and the Joule for day to day. I used to use zip lock but have now invested in actual sous vide bags and a vacuum sealer. The reason is that I usually cook most of my animal protein for the week sous vide over the weekend. This makes it easier to put together a ketogenic meal during the week. As many of the viewers on a keto diet may have realized by now that you end up cooking a lot more as opposed to eating out because its just much more satisfying and you can use quality ingredients. Your recipes really help because I can prepare the sauces per your recipe and add the protein at the right time.I know, I know, its not the same if the chicken/lamb/etc. doesn't cook in its own juices, etc. etc. but I'm not going to make perfect the enemy of the very good. That's awesome!! I really need to get into this sous vide game. I just wish we had the same kind of beef cuts here in India, Sometimes I feel with the kind of meat we get here it's not worth the effort. But will give it a go.

Yes! Dry aging is fantastic. I don't know why but the interwebs will tell you to do this with primal cuts only. WRONG. If you're paying so much money for a good piece of steak, it's worth it to dry age it. I think 2 days if it's 1"-1 1/4" thick if it's thicker, 3-5 days.

The internet is a strange place. Also in India it's different because we don't get Sirloin and Topside and T-Bone etc. We get Beef Meat which has to be slow cooked, we get beef mince and we get Tenderloin which is used for steaks. Anything else is very hard to source here locally.

It looks delicious, but i want to ask one thing bro that how to cook to make it soft and tender. As i tried it earlier however it was quite thin steak but it was quite hard even after cooking, may be i did not cook it perfectly? Any advice bro?thanks

hey so the softness depends on the CUT of meat you buy. So there are different muscle groups and different kind of steaks and cuts and each one has a different cooking time and tenderness. So you want to buy TENDERLOIN which is the most tender cut. Depending on which country you live in the other cuts will differ. Hope that helps.

haha well I ate them later. I did nothing exciting with them :) And for dry aging meat Just leave it open in the fridge on a rack. If you don't have a rack then a plate works as well, just flip the meat half way through the process.

Does water buffalo taste similar to beef or is it a little gamier like venison? I've never had it. This looks fantastic!

Well the beef in India in general has a gamier flavour compared to the UK/Europe beef. They are different breeds of cattle.

The fat content is a little lower and therefore tends to dry out a bit.

Bhai, how to dry age the beef in our refrigerator ? Just hand it by hook on our regular refrigerator or you used separate fridge for that ?

Regular fridge, just keep it open on a rack if you have otherwise on a plate like I did and flip it after 1 day so the 2nd side gets the cool air.

I have never dry aged lamb and I don't know if it's something people do. Also when you say lamb do you mean that fancy imported lamb? or local mutton? The thing is the cook time for all animals and their various cuts are different. So perhaps Lamb Loin or Pork Loin will cook at a similar time but you don't eat pork Loin medium rare, you'll have it cooked through. So got to take all that into account.

Not a silly question at all. Just leave it open in the fridge on a rack. If you don't have a rack then a plate works as well, just flip the meat half way through the process.

Joseph's Cold Storage Bandra, there are butchers in other parts of the city too but I go here. Also sometimes in Nature's BAsket and Foodhall you can get it. ALso meatigo.com delivers sometimes.

We used to eat buffalo before the ban (not even cow) . That's what's been banned now. The water buffalo just doesn't cut it for me :/ I can def tell the difference

So my butcher claims I was eating cow. I can tell a 5% difference from earlier and now in the meat from my butcher. Joseph's Cold Storage in Bandra. But there is a difference. Also since we get all the old cattle the quality literally varies from animal to animal at least with the tenderloin, everything else is the same anyway :P

Nope the cow is about as sacred as a chicken. Let's just say Hindu extremists and politicians have exploited the religious texts and pooped a load of shit on the country. Hinduism was a way of life and not a religion which it's been turned into now and many Hindu people ate cow as well. Anyway you can keep a cow captive and milk it or let it roam the streets of the city eating garbage but you can't slaughter it.
