Great video...your chicken and ground beef looks just like mine. I Have enough chicken for all winter, not so much the plain ground beef, as I used a lot of my beef making spaghetti sauce...that, too, is done for all winter. Canning is a fever.....been doing it when my 9 kids were little, right up to now, I am a widow and all kids are grown and married. I love canning !!!

Tip: When canning meat, add a celery stick, carrot stick and a chunk of sweet or vidalia onion to the raw pack. The flavor is amazing + the added nutrients from the veggies.

GrandmaSewHappy Homestead did meatballs too! Came out beautiful...unfortunately, planned too well...only one lone meatball left to eat...wanted more. Wasn’t sure if they would break apart during canning process (had baked them before jarring up). Amazed...all held together...definite winner.

Every time I watch one of your canning videos I curse the fact that canning just isn't a thang here in the UK, so few people use it as a storage method that we had to import our 3 pressure caners from your side yet its such a fantastic way to save thousands on your annual grocery costs by just swinging with the seasons and bulk canning as seasonal glut brings prices down or you have your own home grown glut, not to mention how darn handy canned foods are when you find yourself with unexpected meal guests that 0 defrost time makes bulking up or baking an extra pie a dawdle.

I love seeing people like me on RU-vid. People who don’t have an immaculately clean home and people who don’t have their hair all fancy and make up on. Most of the time I feel like I’m just getting by 🤣 I like knowing I’m not the only one with dishes in the sink

Yeah who in a pandemic is going to put on makeup or earrings, not me... the mask is going to cover it and I'm just not out enough to care how I look in my mask and shield, I figure I look ridiculous already so no need to add cosmetics to smear up the mask. PLus my house is a disaster... I have cans off food everywhere, in the dining room chairs, on the floor, in the pantry spilling out into the living room. I buy so I don't have to shop for a least 6 weeks.

Yes, please do a farm chore video! I have learned so much watching this process and can understand why my farm bred dad missed his boyhood home so much. He married a city girl and she wasn't having anything to do with the country. I feel I really missed out when I watch you enjoying your farm life.

We canned pork that we bought on sale. I just put one tsp. canning salt to each quart. If my husband goes deer hunting in the fall we can venison and put one tsp. canning salt, large chunk of onion, and a cubed piece of fat back in each quart. It makes it smell and taste like beef. It takes out the wild taste. I love your videos. I learn a lot of tips from you. Thanks for sharing and God bless you all.

It makes my heart sing to see you canning😊. Just a tip when you wash your lid, remove your gasket. The soap will dry it out. Btw canning freezer food to make room makes perfect sense

I leave the plastic on the boxes and pull it back over the jars. Keeps the dirt out and holds them steady. If you ever lose the rack that goes on the bottom of the canner, a cotton kitchen cloth works. Don't ask how I know. First thing I tell new canners is don't get a canner with a gauge. You watch it and adjust and re-adjust and that can cause loss of liquid in the jars. Which is fine, it's still good. If you go with a weight only canner, it self stabilizes the pressure in the canner. If you have to can over 10 lbs for your altitude, just use the 15 weight it's fine. I have never raw packed ground beef. So, you're not alone.

Linda’s pantry is another really good RU-vidr. She does a lot of canning and prepping. She cooks or par cooks meat because she says it just taste better. I’m in the canning mood too but the gauge on my canner doesn’t seem to be working quite right so I’m gonna have to get that replaced.

My parents put together about a year of food storage, and we started eating out of it right away. We kept up this method of shopping on sale, storing up, and making meals out of what was on the shelf and it got us through a few years where my dad wasnt making really any money and us kids hardly noticed the difference.

I grew up on a farm. My mom and grandmother would can a lot.i have been canning for awhile. I am still learning. RU-vid can provide a lot of info. Ball makes a different canning book every year with different information and recipes. I’ve been collecting these. When I first started canning, they provided a lot of information to me. I also can ground meat. I don’t add liquid, just cooked meat. It’s a little harder to get out of the jar, but you can get more out of a jar. You can store more using less jars. If I were to start canning now with all I’ve learned, I’d only buy wide mouth jars. They are easier to deal with. Especially when doing meat or pickles. I think we have the same canner. If we do then you can actually fit 10 pint jars and if you buy another rack, you can double stack....can 20 pint jars at a time. Huge time saver! Check your book. This year was the first time I canned meatballs! They are awesome! I recommend to can this. Can’t can breads or crackers in your meat. Doesn’t work well. Take hamburger and spices, mix, roll into whatever size balls you like...I did small, cook in oven for about 15 minutes....so they hold their shape during canning, put in jars with broth.....can use water, can according to your canner. I opened a jar for meatball subs, they were great. I want to make the broth into gravy and put over potatoes next time. Love love love my canner. Hope you have fun with yours! A lot of work, but easy meals when you need it. Homemade soups are so nice in winter! Also, first year for me and my dehydrator. You should try this. Great way to use veggies that may get thrown out. I got a good sale on veggies. Have about 20 or so pounds of dehydrated potatoes in a half gallon ball jar. Great way to store a lot in a small space. Got two 10# cans of green beans in a half gallon jar. If I only need a little of this and that for a recipe, have it without extra left over.

I would love to see a farm chore video. I just love watching any video you make. I grew up on Long Island on a farm. We had chickens, sheep, a ram, rabbits, goats, cats, german shepards, horses, cows, fruit trees, gardens, fish ponds, a honey bear, a sweet baby monkey, racing pigeons, and many more, even a desecented skunk. 🙂💚

Lots of people are doing just as you are. Just look up and try and buy canning supplies today. Most stores are out of stock on alot of stuff. Try and buy long term shelf food. Wait list. Especially now with everything going on in the world, job loss. Many things could happen. People used to make fun of extreme couponers. I think I envied them the most when stores were bare for weeks. just clicked on the you tube to watch a little as i start prepping my bushel of green beans from the farmers market this morning . half bushel of tomatoes was done last night. i too love canning.

When you open the chicken, save the broth...it's the best tasting broth I have ever had. I freeze in in zip lock baggies and add to it as I open more jars...I use is when make something that calls for a little chicken stock.

When you have a space when canning meat... add 1C of dried beans to a qt jar or 1/2C for pints and fill to 1/2 inch with water. Then process with your jars of meat. 90 mins for qts and 75 for pints. I have the AA941 and it does 20 qts at a time. I love it! I also get the bags of chicken quarters and separate the legs and the thighs. The back you take and roast and then simmer with veggie butts and onion skins for chicken broth.

Spent today canning raw packed chicken breasts, hot packed chicken thighs, and hot packed beef stew meat to get some space for tomatoes and figs in the freeze as they start to come on quicker that I can process. I don't like canned ground beef, but that is just personal preference (it is a texture thing). Make sure you are wiping those rims with vinegar to get a good seal. You are doing a great job with your home preservation efforts, keep up the good work!

A FWIW... On Presto canners, consider replacing the 15 lb standard pressure regulator with their adjustable regulator. Presto Part Number 50332. I bought 2 of them several years ago for mine. As long as I'm within seeing and hearing my canners, I can do other things while I'm canning WITHOUT having to baby sit the dial pressure gauge. And, IMO, equally as important. It is recommended that canner pressure gauges be checked annually for accuracy. County extension services used to do this. It's no longer being offered as a service, in many places. When you use an adjustable pressure regulator and use the 10 lb weight, for example, it will test the accuracy of your gauge for you. It takes 11 lbs of pressure to move a regulator set for 10 lbs. When the regulator moves, check the reading on your dial. Currently mine reads about 11.5 lbs. So I know my dial is accurate. If, when set for 10 lbs and your dial reads 9 lbs or 12 lbs, you know that's how much your gauge is off. When reading the dial, you know how much to add or subtract from the dial reading to know the actual amount of pressure within the canner, when using the 15 lb standard regulator. BTW, I recently bought a 16 qt Presto canner for small batch canning. It didn't come with a dial gauge. It did come with that adjustable regulator. Because I already had experience with it with my larger canners, enjoyed seeing it work like a charm on the new one. NO MORE DIAL WATCHING NEEDED for modern* Presto canners. Paid about $10 each for the adjustable regulators I bought. Well worth the investment!!!!!! *From what I understand some of the OLD canners use a different style vent pipe. The adjustable regulator won't fit those. PS: When ordering the adjustable regulator, do order a replacement gasket set. The gaskets that come with the canners last for many years. However, accidents do happen, such as setting the lid on a hot burner. And, eventually the original gasket will fail. Not an issue, when you have a full canner load of meat and that happens, IF you have the replacement gasket on hand. Learned that lesson, personally, years ago. Have on my to-do list to order a replacement gasket for the canner I just bought. May be 10 years before I need it. When I do, it'll be in my canning supplies kit.

I love canning. It’s something that gives me peace to know I have homemade home grown food on my pantry shelf. There is only 3 of us but, it’s nice to open a jar of veggie soup in the winter.

I love to can meat to take camping! One trick with ground beef, add 2 packets of taco seasoning before flossing. You can also do this with packets of spaghetti sauce. Love your videos, been an "off" day so have spent all day enjoying catching up. God Bless you!

I've been pressure canning meats for many years. One if my family's favorites is meatloaf. I also make freezer mashed potatoes and homemade creamed corn. All preprepped. You can have a beautiful meatloaf dinner in minutes.

Doesn’t it make your heart happy to know that you have food put away in case of emergency. Seriously I love canning, I enjoy it, I love knowing that I have at least a month of food. I’m lazy and know I can pop a jar and I’m good to go! So glad you’re doing this! Very good job. Our ancestors canned food after harvest to last the year. Love it, God Bless

I’ve been binging your videos for a week now and you’ve got me building up my food/freezer storage and its just my boyfriend and I in our little apartment lol my mama actually cans several times a year: tomatoes, apples, peaches, pickled veggies, etc. She is a single mama empty nester with to 5 adult children with a full blown canned food storage filling half her basement because she cans for fun!

Slightly browning the hamburger prevents it from sticking/packing together. The more dense the mass the harder it is to get the center to the temperature for the time required (10/11 lb pressure = 240F for 90 minutes ) to kill the spores that produce botulism toxin. Same reason we don't home can mashed sweet potatoes, butternut squash, etc. Browning the ground beef allows the water (I use beef broth) to help distribute the heat. I use a large skillet and brown about 2-3 lbs at a time. Straining it, as it's removed from the skillet. Dripping are saved, refrigerated, fat removed and remainder is processed for beef broth. Fat is rendered into tallow, as well. Nothing goes to waste. Been working on reducing our reliance on our freezer. Have canned or dehydrated most of what was in it. Started when weather folks predicted a more active hurricane season, this year. Have experienced extended grid-down from both hurricanes and ice storms. Many folks say they'll can what's in the freezer, if electricity fails. Those are the folks who've never experienced the hours it takes to do large batch canning. During hurricane season (HOT weather), the time is short before what's in the freezer thaws and spoils. Nor, do they realize how much fresh/clean water is needed for this task. I have a well, so I don't have abundant water when the power fails. Plus, there's no guarantee that city water will be available in a disaster situation, whether natural or man-made. Just washing and rinsing equipment, jars, lids takes gallons of potable water. BTW, its still several weeks before the beginning of the highest time of hurricane activity. From what I understand, 12 named storms is the average, in a season. We've already had 6!!!! I won't turn off our freezer, as I use it to make/store block ice. Use it for foods that I don't want to can such as Cornish Hens and chicken destined for the grill. It is a good holding pen for extra turkey bought in November to can in January. Bulk chicken is being sold, here, in 10 lb bags of leg quarters for $.59 or $.79 / lb. Whole chickens on sale for $.99 /lb this week at our local Food Lion. There's room in the freezer to buy a bunch and can it as time permits. (Sanitized soda bottles filled almost full of water & frozen can be removed and returned to the freezer, as needed. Plus, they will provide drinking water, if/when the need arises. ) We don't know what the future is going to bring. Don't know about other folks. I can't stock enough fuel to run a generator for weeks while waiting for repair crews to finally come down our rural country road. Solar is an investment that I'll leave to the generation that follows mine, if they wish. Born on a pre-grid farm. Remember, well, when REA brought power lines across our land. Love the convenience of electricity. Yet, recognize the need to be independent of it, when it or anything that runs on it fails. Thus, canning and dehydrating are my main means of being independent of that meter on the side of my house. There are also salt curing (learned it as a child), fermenting, root cellaring, smoking food preservation methods. Thank you for your video on canning. Thank you for your emphasis on following tested guidelines. "Rogue Canning" is popular in some circles. --Their kitchen, their choice. -- I can't take that risk for my family and friends when they eat the food I've preserved. It's my choice, if I personally take the risk. It's wrong if they aren't given the opportunity to make that choice for themselves.

I have the same canner, and to save yourself the headache, order the adjustable weight. The one that comes with it is 15psi, the adjustable one does 5, 10 and 15. What's nice is that it'll just rock and maintain your pressure at 10psi with very little babysitting compared to watching the dial and adjusting heat up or down. I wish I hadn't waited over a year to finally order.

Nice video! Your raw pack chicken will shred and can be used for sandwiches. If you parbroil it and can with chicken stock...will have soft chunks that can be used any way you like. Hamburger cooked, strained, a little diluted beef broth. Sirloin roast sliced, cooked slow in oven for about two hours bathed in broth...jarred...my favorite! Meatballs came out great also...only added powdered dehydrated mushrooms, onion “flakes”...no eggs or bread crumbs...bake and pack into jars with diluted beef broth...another winner. One of your subs stated she was canning beef stew...did that also...another winner! I find browning the meat...partially cooking adds flavor and is considered hot pack even if not fully cooked. For a large family like yours...having individually canned up meat and veggies good, but also a few meals whether soup, beef stew, chicken and veggie stew for something fast. Since you will be processing meat birds...consider cooking one or two up leaving bones to cook down with veggies for broth to can...so much better than broth you buy in the store. Use either apple cider vinegar or a little beer or soda while cooking bones to extract minerals from bones...don’t forget the feet...may sound gross, but the gelatinous substance is healthy for you. Just canned a few peaches...could not get cling-free, but got non-gassed ones...organic. With your garden coming in and people around you growing lots of goodies...best time to store food for freezer, dehydration, canning. Don’t know how you manage to do so much with a large family...80% of day must focus on preparing meals and cleaning, doing laundry...now to do videos, tend to a garden, shop, long-term food storage, settling into a new home. Yikes! I remember the commercial “Calgon, take me away”! So, if you wear a towel on your head...so be it! Lucky you had time to shower and wash your hair.

Great video! I've been canning veggies for a few years but never did meat. It looks like a great idea especially the chicken. I'd LOVE to see a farming video mainly to see how the garden has done. I'm anxious to see how the potatoes have done and all of those wonderful tomatoes!

Hello yes I was raised to store food short term and long term. My grand parents and parents went through The Great Depression and the lessons learned where taught to us growing up. I think I am the only one out of four kids that still prepare and prep for any thing and for any natural disaster. IT is so cool to come along and can with you and it helps you reading the directions lol even though I have the same caner. Yes we would love to see some farm chores and the chickens. I love watching the kneady homesteader.. I watched her show about her shelves and where she said she bought them and how she had them arranged.. And I immediately went to Sam's club And bought 3 of the big shelving units she said in her video they were like $100 but I got them for $69 that's their regular price.. Maybe they came down in price since she got them, But just to be sure I ask the store manager and they said that was a regular price.. I love them things being able to slide the jars on them and the easy clean up..amazing..

We can't find any deep freezers within 250 miles of where I live...every time i get an in stock notificastion by the time I get to the store their gone... OMG. I digress, I would love to can some food and be able to do freezer meals one day. Everyone in my family seems to think I m "crazy: for wanting my own land and a house so I can grow my own food and raise my own animals. Even before all of this craziness I have been yearning for the freedom to do so. But God willing one day I'll be doing my Jamerrill talking hands in my very own garden. I canned chicken pot pie filling last weekend. I have been canning every weekend for the past 2 months. Peach spiced rum sauce, monkey butter, ham and bean soup, spicy beef vege soup, chicken vege soup and I did layered chicken soup in a jar. I just wanted to share something. I thought of you yesterday as I was bulk prepping over night oats in a massive bowl. I filled it way to full and it spilled out as I was mixing it. 🤣 We are only a family of 3 but I love bulk storing and preparing. SAVE YOUR BOXES FOR THE EMPTY JARS AND DISPLAY ALL YOUR BEAUTIFUL HARD WORK. ITS JUST SO SATISFYING! Oops sorry for the caps! With ground beef I think it's just a preference on how you like the texture of the meat. Also with cold packing your meat, start with cold water in your canners not boiling so your jars heat up with the water and don't crack or break.
