Here we go …
The Solonese Sausage …!
Well, after modifying some recipes from various sources, then here I got the final economical version of Solonese Sausage.
Although its economical and with limited use of eggs, but its taste can’t be underestimated, it remains soft & yummy.
BTW, Solo Sausage is so much close to Lumpia (Spring Rolls), but the texture of its wrap is softer because it is fried by dipping it in an egg-beating batter.
Its wrap uses a lot of eggs. And in terms of shape, Solonese Sausages are usually crummier and stringier.
Note that this is the economical version, so I reduced the eggs to 2 eggs.
Ingredients
Ingredient for its Wrap
* 750 grams Bread flour.
* 1 teaspoon Salt, suit your taste.
* 2 Eggs.
* 75 grams or 5 tablespoons tapioca flour
* 1 teaspoon of garlic powder (or 3 cloves mashed garlic, optional).
* 60 ml or about 6 tablespoons of cooking.
* 1700-1800 ml water.
Ingredients for its Filling
* 500 grams of boneless chicken aka Chicken fillet.
* 400 ml Chicken Broth (The water leftover from boiling the Chicken fillet).
* 1 sachet of Instant Coconut Milk (65 ml).
* 3 to 5 tablespoons cooking oil for sautéing.
Ingredients for Ground Spices
* 7 Shallots.
* 5 Garlic.
* 2 Candlenuts.
* 1 segment of Ginger, optional.
* 2 stems of Lemongrass, take its white part.
Other Ingredients
* 1 teaspoon pepper powder.
* 1 to 2 teaspoon Chicken broth or Mushroom powder, suit your taste.
* 1 teaspoon Salt, suit your taste.
* 1 teaspoon Sugar.
* 3 to 4 Bay leaves or Kaffir lime leaves.
* 2 scallions, thinly sliced, optional.
Ingredients for its Dipping (Stir well)
* 2 Eggs.
* 50 ml of Water.
* ½ teaspoon Salt.
Or you can use 3 eggs, beat it with a little additional salt.
### Miscellaneous
* 750 ml Cooking Oil.
* 100 grams of green cayenne pepper.

// The Sausage Solo filling for the melted version, it’s only a variation, while the original version obviously uses coconut milk.
// If you use the melted version of the filling, the dosage of pepper powder should be added more.
Because if it’s less spicy, I think it’ll feel somehow uneasy for my tummy, because it contains liquid milk.
