How to make Garlic Mushroom & Cauliflower Pasta. This pasta recipe is amazingly fresh, fragrant, healthy, and full of flavour. With easy to follow instructions and recipe, this dish will impress anyone you serve it too. Enjoy
Serves - 2
Ingredients -
200g - Penne or pasta of your choice
1 Tbsp (15ml) - Olive Oil
1 - Small Brown Onion, Thinley Sliced
2 Cloves - Garlic, Thinley Sliced
1 - Long Red Chilli, Deseeded and Thinley Sliced
4 Sprigs (3g) - Thyme, Roughly Chopped
200g - Portabello Mushrooms
300g (1/2) - Cauliflower
2 Tbsp (30ml) - White Wine (Can be substituted for Vegetable stock)
5g - Flat Leaf Parsely, Roughly Chopped (1/4 saved for garnish)
100g - Ricotta Cheese
1 - Lemon, Zest Only
Season to taste
Parmesan Cheese to serve
Extra Virgin Olive Oil to serve

OMG Jack! I just did this dish for tonight's dinner and it has changed my life. Usually when I make pasta it is cream or tomato based. I am not a huge fan of ricotta cheese in general but I thought, what the hell, none of your recipes have let me down yet. This dish, was FREAKING INCREDIBLE. Hit all the right notes, slightly sweet and a little bit salty and it will now definitely be part of my regular recipe repertoire. I did re-jig the recipe a little to accommodate a family size meal (2x more cauliflower, x.5 more pasta and 50gm more ricotta) but apart from that I followed the recipe so there would be enough to take to work the next day for lunch for two adults. My partner had lunch plans tomorrow, just cancelled those plans to have this this for lunch tomorrow. That's a bit sad, but a total win for this dish. To anyone whom reads the comments, YOU MUST TRY THIS DISH! It's a definite winner.

Made this yesterday evening and followed the recipe step by step. I think it did lack in flavour compared to other recipes ive made of yours but i still enjoyed making something different so thank you for uploading. The explanations are always clear and easy to follow.

Chef jack, When we save the onion parts for a stalk do we freeze it or put it back in the fridge.

i think it depends on when you plan to make the stock.

The scraps will last about 1 week in your fridge before they start to break down and go bad. If you are not going to be making a stock within that timeframe or you have too much scraps, you can freeze them down and use them when you are ready. They also don't need to be defrosted when used out of a freezer, you can add them straight into the pot frozen.

Hi Jack, are you a fan of fish sauce? someone tipped me off on it [[gentlesmans gazette youtube channel to be precise]] and I think its really added something to my cooking. I reduce salt and add a few glugs of it. Question I'm wondering about, how much are you supposed to use?

Yes I love fish sauce. It's a very powerful ingredient and you shouldn't use too much. It really depends on the recipe and how much of that recipe you are making. Id say only a few drops can overpower a dish, It just really depends on what your intentions are with it. If you have a dish in mind, I can help you with amounts.

It's lots of practice. I used to be terrible, but with a bit of practice and a good sharp knife you will be slicing those veggies like a pro in no time!

You can leave them out all together. It will slightly change the flavour, but not enough that you will notice much. It will still be delicious! 😊

yeah, but i would put it in the stock only for the remaining 15 mins or so to avoid it breaking up and making the stock cloudy.

I would personally never add any cruciferous vegetables to a stock such as, Cauliflower, Broccoli and cabbage. They create an undesirable bitter flavour, can create cloudiness and will more than likely ruin your stock. If you don't want to waste the roots, you can peel them back making sure there's no nodes (Stems) and cut them up and add them through the dish you are cooking.

Do you reckon smoked feta will work instead of ricotta? Being Italian, i would prefer ricotta cheese, but i don't have any and I don't feel like driving to the shops hahaha
