Garlic Spinach Dal - my most popular dal recipe! Super garlicky and a great way to use a bunch of spinach (fresh or frozen)
// INGREDIENTS //
🧄 1 cup split green moong dal, rinsed well
🧄 4 cups water (you can adjust as needed and even add more at the end!)
🧄 1 large tomato, diced
🧄 3 green chilies, finely chopped (+/-)
🧄 1/2 inch ginger, grated
🧄 1/2 tsp turmeric
🧄 1 tsp coriander powder
🧄 Salt to taste
🧄 2 cups spinach, chopped (frozen or fresh)
🌶 1 tbsp ghee or avocado oil
🌶 1/2 tsp cumin seeds
🌶 6 cloves of garlic, minced
🌶 1/4 tsp red chili powder (+/-)
🌶 1 dried red chili, broken in two pieces so the oil can get inside (eliminate for less heat)
🌶 Juice of one lime
// RECIPE //
1️⃣ Add your rinsed dal and water to your pot and let it soak for 10 min while you prep your other ingredients.
2️⃣ Add tomatoes, green chilies, ginger, turmeric, coriander powder, and salt to pot. If using frozen spinach, add it now.
3️⃣ Set pressure cook settings to sealing, High, Natural Release, 7 minutes.
4️⃣ Once cooking is done, wait for the pressure to release or manually release the remaining pressure after 10 min.
5️⃣ Open carefully and check the consistency. If it’s too thick for your liking, add some more water!
6️⃣ If using fresh spinach, set the instant pot / mealthy to sauté mode and add the spinach and cook for a few minutes.
7️⃣ Make your tadka / chhonk (temper your spices) in a small pan. Add the ghee or oil and get it very hot.
8️⃣ Add cumin seeds and once they start “dancing”, add garlic, and mix or swirl around for 20-30 seconds, making sure not to burn the garlic. Then add red chili powder and dried red chili. Mix for 10 seconds and remove off heat.
9️⃣ Add the tadka directly to the dal, add lime juice, mix well, taste to adjust salt, and serve!

Being iron deficient was the worst, I was so weak in the body, not head like tried. It felt so strange and couldn't walk. Ladies please, make sure to intake your iron, it's important.

@@Priyakumari_3004 The doctor told to eat more fruits and to eat beef. I also had to take some medicine (pills, which I forgot the name). I honestly needed some rest and to keep my iron up.

Great recipe! For better iron absorption use kale instead of spinach, and add some bell peppers, or eat the dal with a food that is high in vitamin c, it really helps with the absorption.

For this reason a wedge of lemon is served with this dal ( for most daal preparations ) in several regions of india. it is important to know the science behind this. you already nailed it.

I think this is good to eat as it is when it's warm especially when you are on your periods Dal is a great comfort food and with spinach it's healthy 💛

I made this today and my god tadka just elevates the dal. My mother usually keeps thing simple and only does cumin tadka but today with the chilli and garlic, I have make it supreme

You can take the tadka close to itsburning point and then when adding it to the daal cover it so you get a little smoky flavor also incorporated.

I just made this recipe, badly, like I had to use a quarter of a jar of salsa because I dont have tomatoes, and I don't have 2 of the spices BUT it is one of the best things ever so garlicy and gooooood

I love you voice and your explanation and personal touch. TYSM for posting a written recipe. I have anemia since I'm 16 yo. My mom gave me Spanish lentil stew for breakfast everyday in the winter. THIS will be an adult version that seems so warming and delicious. The nutrition is a blessing as are the menories past and future. Love the spice blend, garlic and frozen spinach. You guys if you are worried about the non-heme iron not being bioavailable, I think that squeeze of lime at the end will take care of it wih vitamin C which makes non-heme iron more bioavailable. Feel free to correct me if I'm wrong

That's true! Enhancers of non-heme iron include: Sugar: especially fructose and sorbitol. Acid: like ascorbic (vitamin c), citric, or lactic. Meat: fish and poultry. Mucin (released by cells in your GI tract.) For vegetarians out there, a protein in egg yolks (phosvitin) inhibits non-heme iron absorption.

It‘s not about the iron being non-heme, it‘s about the ocalic acid in the spinach. It stops iron absorption. Spinach is not an iron source for the human body bc of that.

@@lilalizzard I do know that oxalic acid is something that's discarded, but I don't think I've ever read anywhere that oxalates can inhibit non-heme iron absorption. If high oxalate content is what's the concern, then consuming good amount of calcium which binds with it, drinking good amount of water which would excrete it regularly and having a healthy guy microbiome that consumes oxalates should be fine.

Thanks for sharing! I'm Italian and my grandma made a very similar dish for me when I was iron deficient (she was Neapolitan and Albanese. Not sure which tradition the dish is from). However, I do love Indian spices, and will be trying this spinach lentil garlic dish. Many thanks for reminding me of her, and for widening my spice exposure.

That looks great. I always go for a thicker consistency. When I'm feeling fancy I steam some lentils until they're done but still springy and mix them into the finished dal for more texture. Entirely unnecessary, but I like it.

This isn‘t an iron-rich recipe! The reason is the oxalic acid in the spinach. It stops iron absorption. So, the oxalic acid in this recipe actually stops your body from absorbing any iron.

In my opinion, use all the dals you have, it will be tastier. That's what I do. But using only red lentils won't give the same taste I think.

Oh yes absolutely! also red lentils cook very fast and is very nutritious. Just cook it with onion tomatoes chilli. It will taste amazing with hot steamed rice

Yes! I'm Sri Lankan and we consume more red Dhal as in Mysore dhal. I also love cooking spinach with pumpkin too. It's one of my favourite side dishes.

Here’s a suggestion. Since you’re cooking it in an instant pot - you can temper is first and then let the dal cook. So it’s a one pot solution.

I think so. I like the yellow ones, rather mild. I will be trying the red ones soon. Brown ones kinda taste like black bean. And green kinda taste like peas, i think. I don't think I've had black.

I do. I heard taking a small amount of baking soda in water helps or apple cider vinegar by the TBS. Maybe Google it? I will try these methods soon.

And remember, the iron that's in plants is better absorbed when eaten with vitamin C (so the squeeze of lemon is highly reccomended). Also, tea, coffee and dairy (specifically calcium in dairy) inhibit the absorption of iron, so drinking or eating these things right before or after this delicious iron rich meal isn't ideal ❤❤❤
