I never used to like ginger beer when I was younger and now I can't get enough of it! This recipe looks perfect and easy to make. I will be trying it, thanks so much.

Di Caripean Foodie I suspect it is fermenting, which is a way to naturally preserve foods with helpful bacteria, like sauerkraut or pickles.
