Glorias de Linares are a very traditional dessert from the North of Mexico, made precisely in Linares, Nuevo Leon, very close to Monterrey, my city!
In fact, most likely you have visited a restaurant in Monterrey, or Linares (especially for grilled meats or the traditional goat), and before you get the bill, the restaurant will offer you a dessert and among them the glorias de Linares.
They are an exquisite sweet made from kid's milk (in this recipe I use cow's milk). And the best thing is that apart from the fact that there are very few ingredients, it is a 100% gluten-free dessert. As in my family we are celiacs, this dessert is very good for us, especially during the Christmas season.
And because of Christmas and the nostalgia that this time brings, in addition to the fact that the COVID-19 has not allowed us to spend time with the family, is that it came to my mind to make this dessert. I hope this tutorial will be of help to make this delicious sweet.
I still remember the aromas and the ladies who made this sweet from their homes or marquetries (factory of glories). Walking through the streets of Linares it is very pleasant to perceive that sweet aroma, an aroma of home.
This delicacy has delighted sugar lovers since the 1930's. It is said that its creation was the work of a lady from Monterrey who lived in the city of Linares, in the south of Nuevo León. It is said that its name came from 'bringing glory to those who taste it'.
To make 15 glorias you need:
2 cups of goat's or cow's milk, and that is fresh.
1 ¼ cup cane sugar.
½ cup of chopped walnuts. It can be pecan or castile.
¼ teaspoon of baking soda.
And a lot of patience, as it takes between an hour and a half, to two hours to get the milk condensed.
PREPARATION:
Put the milk, sugar and baking soda in a saucepan and heat over medium heat.
When it starts to boil, lower the flame.
When lowering the flame, let it boil but at the same time stir the mixture.
When it has a more condensed consistency, remove from heat and let it cool.
Before it is completely cold, add the chopped walnuts.
Leave the milk mixture with the walnut for about 24 hours, this way you can better handle the glorias and make small balls with your hands and wrap them in red cellophane paper.
Tip: Use powdered sugar on your hands to better handle the product.
