Makes: 3 8-inch cakes
This moist chocolate cake recipe will make you wonder if it’s really gluten free! Great flavor too. Use this basic recipe to create anything from simple layer cakes to over-the-top masterpieces for parties and holidays.
INGREDIENTS:
1 cup white rice flour
½ cup potato starch
½ cup tapioca starch
1 cup unsweetened cocoa powder
4 tsp. baking powder
1 ½ tsp. baking soda
1 tsp. salt
1/2 tsp. xanthan gum
2 cups white sugar
1 cup milk
½ cup vegetable oil
2 eggs (room temp.)
2 tsp. vanilla extract
1 cup water
GETTING READY:
1. Prepare 3 8-inch cake pans (spray bottom only)
2. Preheat oven to 350 ̊
DIRECTIONS:
1. In a large mixing bowl, whisk together white rice flour, potato starch, tapioca starch, cocoa powder, baking powder, baking soda, salt, and xanthan gum.
2. Stir in sugar
3. Add milk, oil, eggs, vanilla, and water
4. Mix on low until combined, then on medium for at least 3 minutes more
5. Pour into pans evenly and bake for 20-25 minutes or just until toothpick inserted into the center comes out clean, and cake is pulling away from edge of pan slightly.

** Vanilla Buttercream Frosting Recipe gluten free **
This is a classic buttercream frosting…easy, quick and very sweet. The consistency is great for frosting cakes, and piping decorations.
Frosts: 3 8-inch cakes
INGREDIENTS:
1 cup butter
4 cups confectioner’s sugar
1 tsp. vanilla
A few tsp. milk (only as needed for correct consistency)
GETTING READY:
1. Soften the butter
DIRECTIONS:
1. In mixing bowl, cream together butter and vanilla
2. Slowly mix in confectioner’s sugar until fluffy.
3. If needed, add milk one teaspoon at a time, mixing after each addition, until desired consistency is reached. To thicken, add a little bit more confectioner's sugar.

A great hack for frosting layer cake is freeze layers for short time. Works well for crumb control. Beautiful with pastel chocolate curls. Looking forward to making your cake.

I have a question, I want to make a pumpkin roll so I was wondering would gluten free cake work the same way as regular cake like could I take the roll out of the oven while it's still warm roll it up as I would with the regular cake or would it be too stiff to do so (sorry if this makes no sense ^^;)

Hi Annette! The texture would be a little off I think. It might not be spongy enough. I think I'll add that idea to my list of recipes to work on...sounds great :)
