Summer is ice cream time…actually any time is ice cream time! These homemade ice cream sandwiches are so much fun to make (get the kids involved!), and they’re great because you can customize them to your liking! Pick the ice cream flavor, and everyone can dip theirs into their favorite treat!

***RECIPE***
GLUTEN FREE ICE CREAM SANDWICHES
Makes: 8 ice cream sandwiches (2”x4”)
INGREDIENTS:
For The Cake:
½ cup brown rice flour
½ cup white rice flour
1 cup special dark cocoa powder
½ tsp. salt
½ tsp. baking powder
½ tsp. xanthan gum
½ cup (1 stick) + 2 Tbsp. butter, softened
2/3 cup granulated sugar
4 large egg yolks
2 tsp. vanilla
½ cup hot water
Filling:
Ice Cream (any flavor), 1.5 qt.
For Dipping (optional):
Sprinkles, nuts, mini chocolate chips, crushed GF cookies, Mini M&Ms, etc.
GETTING READY
1. STEP ONE NEEDS TO BE DONE AT LEAST A COUPLE HOURS IN ADVANCE OF ALL OTHER STEPS (or night before): Line an 8x8 pan with tinfoil and spray it lightly with non-stick spray. Allow a little tinfoil to hang over the edge. This will help you lift out the ice cream when it’s solid. Fill with ice cream and allow to melt just enough to smooth it out. Press the ice cream in, and fill it as high as you would like your sandwiches to be! Place in freezer until totally solid. (In my freezer it takes a couple of hours at least…it just depends on how well your freezer does its job).
2. Set out butter to soften
3. Line a cookie sheet (at least 16 inches long) with parchment paper. Allow a little bit extra to hang over edge. This will help you lift it off the pan after baking.
4. If you will be adding sprinkles or other treats, pour them into a wide bowl for easy dipping.
5. When ice cream is solid, preheat oven to 375 degrees
LET’S GET STARTED
1. Start by mixing together your dry ingredients: In a medium-sized mixing bowl whisk together the brown rice flour, white rice flour, cocoa powder, salt, baking powder, and xanthan gum. Set aside.
2. In a large-sized mixing bowl, mix together the butter and sugar until creamy. Add in yolks and vanilla. Mix together until well blended.
3. Add dry mixture into the butter/egg mixture. Mix until well blended.
4. Add water and mix until dough is smooth.
5. Place dough onto baking sheet and spread with off-set spatula to form an 8x16 rectangle (actually make it a tiny bit larger on each side to allow for edges to be trimmed neat).
6. Bake at 375° for 10 minutes.
7. Remove from oven.
8. Do not leave on pan. Carefully lift parchment off and place onto a cutting board (bend cake as little as possible to avoid cracking).
9. Allow to cool for 15 minutes or so.
10. Place cake (still on the cutting board) into the freezer for another 20 minutes
11. When cake is FULLY COLD THROUGHOUT you can assemble ice cream sandwiches! Remove cake from freezer. First, trim away any rough edges. Slice into sixteen 2”x4” pieces.
12. If you want a very authentic ice cream sandwich look, use something to press 13 small indentations into each piece of cake.
13. Remove ice cream from freezer and lift ice cream out of pan with the tinfoil edge. You may need a spatula to help you remove it. Work very quickly once you have the ice cream out of the freezer.
14. Slice into eight 2”x4” pieces.
15. Place a plate, baking dish, or cookie sheet into the freezer for the completed sandwiches.
16. To assemble, place an ice cream piece onto a cake piece and top with a second cake piece. Gently press down on top of sandwich to spread ice cream to outer edge of cake. If needed, smooth ice cream around edges with a butter knife. Press edges into sprinkles (or other topping) if desired. Place each sandwich immediately into freezer as you complete it.
17. When all sandwiches are made and frozen firm, take out one at a time to wrap in waxed paper. Tape to secure.
18. Refreeze again before eating if needed, or eat IMMEDIATELY :)

I just found your channel a few minutes ago. I've been wanting to make something for a while, but none of the recipes I found until I saw this channel were gluten free. I found out about my celiac disease 2 years ago, almost 3 now. I already love this channel because I can make this so I have something to do with my free time more than games, and then be able to actually EAT what I make! Thank you!

Hi Linda, Wow! I found your channel on here just last night. Your regular bread recipe looks amazing and I can't wait to try it. I've been GF for at least 10 years now, but for the past few months I've had to be much stricter even (AIP diet) to heal my gut after a bad food poisoning/parasite experience while working in Haiti last year. So in a few more months I can go back to just being GF. That'll be nice! Anyway, I just spent the past couple of hours on your website looking at and printing recipes. You are the GF queen! All your recipes look great and I can tell you've gone to so much work in developing them and filming them. Even your website is very easy to navigate and eye-catching. I especially love that there is a printing option for each recipe and it even prints with a picture on it. Usually I have to copy and paste a recipe into a Word doc and edit it myself and then print it out. That would have taken me forever without that "print" option that you have. One last thing . . . I noticed a small error on your website on the ice cream sandwich recipe. On the step-by-step pictures section, on step 38, the picture is wrong. It shows you cutting some green onions so you'll probably want to switch that out to the correct picture. :o) Just me being anal about stuff. What part of So. Cal. are you located in? I was born in San Diego and most of my family is from there. We lived in Lakeside to be exact. Shelly

Hello Shelly! And thank you!! First of all, thank you for all of your kind comments, and for taking the time to share your thoughts about the website and recipes. I really hope you will find many recipes that you'll love. But being gluten free for 10 years, you must be practically a pro at it by now! Your experience with food poisoning/parasite must have been awful...I hope that you are fully recovered or will be very soon. Also, I really appreciate you mentioning the photo glitch with the Ice Cream Sandwich web-page. I certainly hope no one added green onions! :) I have corrected the picture. I see that you're from beautiful San Diego. I am just a little north of you in Orange County. Best wishes to you!

Thanks Pam! I hope you give these a try. It's pretty hot here right now and I'm constantly making the next batch LOL. Funny that I haven't mentioned the kids! I have two boys, 8 and 16. My older son was diagnosed with celiac disease many, many years ago before it seemed like anyone had even heard of gluten! It was a little rough back then. And so started our gluten free journey :) Now, I love sharing what I learn along the way. Enjoy!!

Hi Ana - No, I don't use store-bought GF "all-purpose" flour mixes in my recipes. I prefer to create my own mix for each recipe that I'm developing, because every cookie/cake/bread/waffle is unique and needs a different combination of flours/starches to be it's best :) Sometimes I try many combinations of flours before settling on a few to use. By controlling all of the ingredients, I can more easily get the results that I'm looking for. If you decide to use the Robin Hood flour, it may work, but you will get different results (taste, texture, etc.) than my recipe, simply because they use different flours/starches, and in different ratios. They may also add in xanthan gum to their mix, so be careful not to double-up on that :) Thanks for asking!

Can I use coconut sugar or Stevia instead of the white sugar? Aaaaaaand the dairy butter with any vegan type of butter?

I actually haven't tried any substitutes on this recipe...you would need to do a little experimenting. My guess is that it would probably work out, although you may have slightly different results. Best of luck with it!
