Hello Andrea, watched your clip and was quite impressed. The masala looks versatile. I love trying different types of rachar masalas and am definitely going to do this one, only I dont have the Goa vinegar, so am going to substitute for the red wine vinegar. Going to experiment a seafood platter with this masala. Thank you for sharing. God bless
This is something new I must try@ the roasted Onion. I use a raw onion and I use half water and half vinegar.. so it doesn't taste too sour. I also cook the masala in a little oil as my mother used to do and bottle it.

It's always better to wash the red chillies before using you can never say in what conditions they are dried just to be on the safer side but yes your recepie is just fantastic !
