Tip: Look for the "REAL CHEESE" sticker or label on the package. Some of the individually wrapped stuff is real cheese, some is just cheese food. Sometimes I heat up a slice tomato (dried on a paper towel first)...add salt & a dash of oregano & cook it in the sandwich. It ends up tasting like Pizza. It's tasty!

Real butter and a good cheese is secret to an excellent grilled cheese. When you get tomatoes, slice one and just as soon as you take your grilled sandwich from the pan, open it and insert your tomato slice. Yum yum.

This is one of my favorite quick dinners! When I make my grilled cheeses I add butter to both sides as well as a little bit of butter in the skillet. I also prefer to use munster or Swiss cheese in grilled cheeses instead of American

Hillbilly Kitchen Verses and Vittles cookbooks, please! Every time I watch your RU-vid station, I learn something new and I've been cooking for over 30 years. I love how you always put God and family first which really explains why your cooking is so perfect...begin with a prayer and serve it to those you love and how could it go wrong?!

I always check for new recipes from you every time I get on my computer. I love your show because you make cooking a lot easier than most others do, and I guess because you are a country person like myself, [South Carolina], you don't use those fancy meals with ingredients that some of us don't even know what certain things are that some chefs use frequently. That is another reason I would love to have your 'The Hillbilly Kitchen Verses and Vittles' cook book. I am a retired senior and a widowed man that has to make my own meals as I live alone. Anyway, I hope you do this forever so I don't miss anything, and God Bless you for that. Thank you, Terry

Thanks so much for the great video. My tip today is about reducing waste in the kitchen. If you find you like having fresh ingredients, but you can't always use them up before they go bad, consider preparing them and freezing for later. For instance, diced onions, celery, peppers, carrots, mushrooms, parsley and other fresh herbs can all be preserved in the freezer for later use. I use these items virtually every day in my meals. Chop up these items before they go bad in your fridge and put them in freezer bags and into the freezer. This way you always have the ingredients ready and nothing goes bad. Plus, you save time by not having to chop, chop, CHOP all the time! May God always bless the hands of the humble home cook! Hillbilly Kitchen Verses & Vittles.

I taught my 24 and 21-year-olds how to cook with cookbooks written for kids in mind. I also showed them basics, liked to show them simple things like pasta just prego and noodles first and as in my picky 21-year-old just noodles with butter. I also told them that they can take cans of veggies or steamed veggies and add them to rice and noodles and they have a nice meal. I even told them to add hot dogs to top ramen. Adding any meat and veggies in ramen is good. My 21-year-old never has gained weight in college like many others do because she knows to add meat and veggies. She will love this sandwhich

I just want to add: I really do enjoy watching you, but I bet it isn’t the reason most other ppl do. I was born in and spent the first 25 years in Texas. Then I wound up in Edmond, OK, then Boulder, CO and back to Edmond again. I just miss southern accents! They make me feel at home! My grandmothers and great grandmothers were rural, farm and dairy people. We’d go on Sunday to visit and then for eating later in the day, my grandmother would reach into her refrigerator and out of a little bit of one leftover, and two or 3 more in margarine tubs, she could turn those into the best dinner!! She would also put out a huge plate of her homemade pickles!! And a big chuck of cheddar. All of those things just tickled me to death!! I get just a tad of that my memory watching you cook, so thank you!! I hope to make your corn fritters just as soon as the sweet corn is in!! My husband is a minister, so I laughed so hard with you telling on the kids in your first church who would say the verse, “Jesse wept,” and take their dollar and run!! I had fun sharing that story with my husband. I will just keep on watching, just wanted you to know, just the way you talk is like being home. Texas home, that is.

Love frying up Isaly's chip chop and putting it in grilled cheese sandwiches. Miss Becky inspired me and I tried frying up tomato slices for the sandwich and added a dollop of 1000 Island dressing. Scrumptious! I was raised by my divorced mom who worked long hours. She taught me the basics and encouraged me to experiment. It's served me well for decades 💗 Hillbilly Kitchen's Verses and Vittles.

I like the grill or fry the ham first (not with the bread), then drain it on paper towels, like you would with bacon. Then I put the cheese and ham on the bread, put the two halves together and grill/fry as you normally would. Also, I'll butter the bread if I'm using sourdough, which isn't so fragile, but with regular bread, I melt the butter in the pan. Stay safe everyone!

Hillbilly Kitchen Verses and Viddles! My tip: if you're using olive oil to cook in the skillet, make sure you use regular olive oil and not extra virgin olive oil. Extra virgin smokes at a lower temperature and will smoke up your kitchen if it gets too hot. Also, a cheap splatter guard (a flat metal mesh topper) also makes kitchen cleanup quicker and less risk of burns from oil splattering up.

One tip I’ve learned on a grilled sandwich, put the butter in the hot pan, let it melt and place the bread in the pan on the hot butter. This works good as you don’t have to fight the bread to get the butter on it, it’s evenly spread, and you don’t use as much butter. Hillbilly Kitchen verses and vittles

I always cook my ham first, put it on a plate till I butter my bread then add cheese, put my ham on and cook it just like a grilled cheese. That way a new cook isn't having to watch to much at one time in the pan. Plus the warmth of the ham will really be hot in the sandwich. God bless!

Your comment about young people learning to cook & not ruining your pans brought to mind a story. I gave my sister-in-law an insulated baking sheet for cookies. My niece decided to make a grilled cheese sandwich when her mother wasn't home and she used that pan on the stovetop. It did not turn out well--the pan melted and made a huge mess on her stove and burner! My niece was so upset but she didn't get in trouble--they all had a good laugh about it.

Hillbilly Verses and Vittles The first grilled ham and cheese I ever made for my husband, he asked me if I was going to fry the ham first. I looked at him and said "No. That's not how I was taught to cook them." He asked me to try cooking it that way, so I did. Been cooking them that way now for the last 30 years. You can also use mayonnaise on the outside of the bread instead of butter to grill it. I know it sounds weird but I saw Paula Deen do it once and tried it and it really works! It adds a nice flavor and you don't have to wait for your butter to soften. Thank you for doing these videos!

I’ve always grilled my meat first, but I did it separately, before I made the sandwiches.. I guess it just came naturally to me, because that’s how I grew up. We’d fry up leftover meats, or ham and eggs. We definitely fried a lot of bologna! That was a favorite..lol However, you did teach this seasoned cook that I can cook it all in the same pan and save myself some time and some dishes too! I hadn’t ever thought of that. Thank you.:) I actually can’t think of a good tip on this subject over what I left yesterday. Other than, they should go back and watch all of your previous videos!! Hillbilly Kitchen Verses and Vittles, I have been making hot ham and cheese sandwiches forever, and have never even thought to heat the meat separately! I always would butter the bread, put cheese, ham, cheese and the last piece of bread and cook it as one unit. I feel stupid! I’m sure the flavor is enhanced by grilling the meat. I would never build a porkroll , egg and cheese that way, so I don’t know why I never thought of that! Thank you for waking me up to this, I can’t wait for lunch tomorrow to see what the hubs has to say about the difference!!!

There's a Rachael Ray hack that has always worked for us when it comes to grilled sandwiches: in place of the butter, use a thin layer of mayonnaise on each slice of bread (not Miracle Whip; it doesn't work). Hillbilly Kitchen Verses and Vittles One thing I would say to a new cook, if you’re going to invest in a piece of kitchen equipment, a slow cooker/crockpot is a great way to start. They’re very forgiving when it comes to a recipe, you can put in your ingredients and walk away. Generally your prep is what takes the longest, and most times that’s minimal. Since using a crockpot, I make all of my soups in it, that previously I would have left to simmer on the stove most of the day. And speaking of soups, they’re probably the easiest, most basic things you can learn to make. A good vegetable or vegetable beef soup, or beef and barley, or chicken noodle are easy, and a great thing to have in your recipe box as a go to. Another tip is to get yourself a collection of basic spices that you can use in many different recipes. I would include: salt, pepper, garlic powder, onion powder, a basic seasoning salt, chili powder, paprika, cumin. As you get used to using seasonings, you can use on line searches to see what seasonings go best with certain meats, or fish. It’s fun to play around with them. Not going to lie though, in my years of cooking, I haven’t always gotten it right, and sometimes it’s trial and error. Give yourself some grace, and try again!

If you are out of butter (which is best) you can use mayonnaise on the bread instead - has enough oil in it to make a great grilled sandwich. Also a very thin slice of raw onion goes really good on a grilled cheese.

The Hillbilly Kitchen Verses and Vittles: Down Home Country Cooking - Put God First! My Little also likes mayo to be added to grilled cheese sandwiches regardless of anything else I put on them (such as your grilled ham version). Both pieces of the bread must be practically soaked with butter and the mayo needs to be cooked into the bread, too. And although I was raised on the classic version of grilled cheese -- good, old Wonder White Bread and American cheese -- Little likes it with two different types of cheese: American and either Provolone or Swiss. My departed, darling husband always wanted his grilled cheese to be on sourdough and made with Jarlsberg and turkey lunch meat that had been either fried or grilled in the skillet until it had crispy edges. Clearly, both my DH and Little both had/have more refined palates and taste buds than me! "The LORD bless thee, and keep thee: The LORD make his face shine upon thee, and be gracious unto thee; The LORD lift up his countenance upon thee, and give thee peace." Numbers 6:24-26

I make my grilled cheese on a cast iron stove top grill pan. If the butter is cold, I don’t want to risk tearing the bread, so I put the butter directly on the pan. Let the butter melt, then as you put the bread on top, move the it around to soak up all of the butter. I like to cook it over a medium/medium low flame to allow the cheese to melt before the bread burns. If you want lots of cheese, put half on each bread slice instead of all on one slice. This will allow it to melt faster.

I love grilled sandwiches. But this was the first time I saw the ham pulled to the side of the pan and cooked separately. I think this will be a new technique for me in the future. Also, I like to add both mayonnaise and sweet pickle slices to the grilled cheese and the ham and cheese sandwiches before grilling. Yummmm! And I do want to emphasize what Becky said about your choice of cheese. Be careful to read your label and get “real cheese” and not cheese food, which seems to be mostly wax, with no food value. Becky, I am a seasoned cook, but I always enjoy your videos because of the way you teach the reason for the way you do something. That is very helpful, and helps me remember the process better. And as a fellow believer, I just love spending time with you. Your reminder to Put God first rings in my head often throughout the day, and helps me prioritize all I do. Hillbilly Kitch Verses and Vittles. Hi Becky, I am 65 years old and have been cooking since I was a young girl. I have raised three daughter and each of them are good cooks-but I still have to make the dressing for each holiday! LOL ! Thank you for your educational cooking videos, even an old cook like me can learn something new, or, just a different way of doing it. My 11yo grand daughter, Sara Kate, likes to help me in the kitchen already. She especially likes to crack eggs and add ingredients that are pre-measured. My tip to the young cook is to never put a hot cast iron skillet into cold water because it will crack the skillet. Another, is to use a dedicated cast iron skillet for making cornbread, and not use it for cooking anything else-this way your cornbread won't ever stick to the skillet. I would really like to win your "Hillbilly Kitchen Verses and Vittles" cookbook for my teenage grandchildren to use during the day when they are home alone. They are eating a lot of microwave junk, like pizza rolls. May God's richest Blessings be yours for putting Him first in all you do. Thank you, Becky.

I love a good grilled cheese sandwich, even better with a fresh sliced tomato. I made your pot roast recipe last month and it was fantastic. Thanks for your great recipes. I love your channel.

Hillbilly Kitchen Verses and Vittles Thanks for the tip. I have grilled ham or chicken and cheese sandwiches all the time, but I never thought of heating up the meat first. Can't wait to try it.

Hillbilly Kitchen Verses & Vittles , Thanks for the videos. Tip to new cooks is to make sure your butter is soft, so you won't tear your bread. Also I have heard you can use Mayo on both sides, if you are short on butter, I have not done this, but it sounds great. :) The grilled Ham and Cheese looks wonderful.

The Hillbilly Kitchen Verses and Vittles; Thanks Becky, I always enjoy your videos. A basic hot sandwich I've made many times is a grilled tuna & cheese. Open faced under the broiler with tomato or just the tuna & cheese on the griddle, they are delicious. Breakfast sandwiches are big at our house, as are fried bolgna or fish stick tacos with cabbage slaw & BLTs. Hot hamburger or chicken & gravy sandwiches & sloppy joes are also a hit... My advice to new cooks, take what you like and make it your own.

Hilly Billy Kitchens Verses and Vittles. I have been making grilled ham and cheese for many years and never thought to cook the ham on the side. Thank you so much from E Tennessee. My tip for 1st time cooks is to start cooking on low to medium not high heat and clean as you go. That's how my Momma taught me and you don't have a mess to clean up after supper lol.

The Hillbilly Kitchen Verses and Vittles: Another great classic, I love to add some nice crunchy onions to mine, slightly cooked so you get that nice crunch, but if your in a pinch and have no onions, i like to use Frenches fried onions.

Looks so yummy, replace the cow cheese for goat cheese and you got a real deal, Smoked cherrywood ham is a real kicker as far as taste. Momma says you want everything at room tempurate before you make that grilled sandwich. Happy cookin!

Hillbilly Verses and Vittles! My family liked bacon and american cheese toasted sammichs. Bake your bacon in the oven @200 degrees for about an hour on a large aluminum foil lined cookie sheet and use a metal cooling rack to lay the bacon on as many pieces you want. I like to cut them in half before cooking, easier to stack as a sammich. Drain on paper towels then start to cook the sammich just like Miss Becky says!

I lived off of grilled cheese and bologna sandwiches when i was a kid. Started cooking at 10. Had 3 younger brothers and sister. So I cooked a lot early.

hillbilly Kitchen verses and vittles, my tip is to keep the pan o medium and watch it, dont leave it alone. One my favorite sandwiches to make is a egg salad sandwich so good toasted or plain, hard boiled geggs, mayo, a little mustard, salt and pepper, i add parsley and sometimes cilantro. So good and inexpensive,

Hillbilly Verses and Vittles. One tip I have is to use mayo or miracle whip in place of butter. Put it on thinly and it’s always soft and easy to spread and it doesn’t taste much different than butter😁. It’s actually good 👍🏼
