Lots of respect for this chef. The level of creativity and appreciation for local products/sustainability. You don't need to be in a big city to encounter high level food.

Almost 60k live in her city. Might not be New York City, but that's enough people to make getting higher end ingredients easy. I live in a 20k city, and I have to order anything not pretty common online, like ground Aleppo peppers.(absolutely amazing peppers BTW)

An engineer's work may not be as accessible to understand, but trust me there is plenty of craftsmanship and creative joy in sophisticated engineering work. Of course, if they did their job right you'll never even know they were there.

When you have both a mechanical engineer and a chef in one body you can be certain nothing will be straight forward and simple except it's all prepared by hand, like a good mechanical engineer would.
