My favorite fruits are guava and avocado. Both super low GI and very tasty.

I had no idea that grapefruit was so low GI! I love grapefruit, so I will definitely keep it in mind for the future.

That is so interesting about the vinegar on fries. I am canadian and I always eat vinegar on fries. I haven't had fries since my diagnosis but good to know if I have some that my vinegar habit is helping! Great video.

Do you cut the potatoes up into a fry shape before boilng and boil for a less duration of time or do you boil the potatoes first and then after cooling cut them up into fries? I already eat the oatmeals that need to be cooked and add chia seeds rather than eat any instant oatmeals which helps me to have a very low spike in my blood sugar and I knew vinegar helps lower blood sugar spikes, but I never knew about preparing fries by boiling first. Thanks for the tips.

No problem! So I usually make my fries in the air fryer and I boil the potatoes first, throw them in the fridge for a few hours, then slice them up into fry shapes. I usually don’t adjust the cooking time.

On the topic of adding vinegar to the potatoes before air frying, do you think tossing them in a vinegar-rich hot sauce would be a net positive overall? Obviously avoiding a hotsauce that has significant added sugar. Just thinking it could give some good flavor while possible lowering the GI or at least not raising it at all. Am I wrong here?
