Healthy meal ideas for the family are so hard to think of on the spot! Look no further than this asian inspired fish recipe consisting of steamed cod and crunchy bok choy. Asian recipes are full of nutrient dense ingredients like ginger, and are a perfect addition to your healthy recipes rotation for your family.
When I cook, I typically try to serve my family "lower carb" or "carb-conscious" meals, not restricting by any means, but making sure I balance the carbs served with healthy fats and protein. Kids love carbs (and need carbs with all the energy they're burning all the time!) so the addition of noodles to this dish is perfect. Even though I've been trying my best to decrease my carb intake due to my insulin resistance and pre diabetes, I still allow myself to eat carbs like noodles in moderation, so I definitely got to enjoy some chopstick-fulls!

A little bit about my blood sugar journey... I was told I was insulin resistant in 2017 after a glucose tolerance test my reproductive endocrinologist ordered for me when I was having trouble getting pregnant. And after conceiving, I was diagnosed with gestational diabetes very early on. Since then, I've been diligently learning about blood sugar dysregulation and gathering data through constant finger pricks and CGM experiments since I am now at greater risk for developing Type 2 Diabetes in the future. I've learned A LOT about what works and doesn't work for my body, and how my body responds to different foods. I hope this video helps you on your path to a healthier lifestyle!

GINGER STEAMED COD WITH BOK CHOY Recipe
INGREDIENTS:
3/4-1lb cod or other firm white fish
Noodles of choice (optional- omit if doing low-carb)
A handful of baby bok choy
1 tbsp ginger, minced
3-4 cloves of garlic, minced
1 lime or 1-2 tbsp of lime juice
1 tbsp butter
1/8 cup oyster sauce
1-2 tbsp of soy sauce, or to taste
salt and pepper, to taste
1. Defrost cod in the fridge overnight. Pat dry and set aside.
2. Mince up garlic and ginger.
3. Saute garlic and ginger in avocado oil. Add chopped bok choy, salt and pepper. Saute for about 5 minutes, and then set aside.
4. Add oyster sauce and soy sauce into warm pan and mix with browned garlic and ginger bits on the bottom of the pan.
5. Add fish on top, throw in a splash of water, and cover with a lid to let steam.
6. Flip fish after 2 minutes, and let cook for another 2 minutes.
7. Add butter and lime juice, and baste fish. Turn off heat and set fish aside.
8. If you are using noodles, throw cooked noodles into the pan, add 1 tbsp of sesame oil, and stir-fry. Add salt and pepper to taste.
9. Plate your noodles, fish, and bok choy, and add hot oil or hot saue if you prefer.
10. Serve.
