Diagnosed with gestational diabetes in my first pregnancy in 2017, I became obsessed with gathering data about my own blood sugar and with what I was feeding my kids. Research said that due to my condition, my boys and I were now at an increased risk of developing diabetes earlier in life.
Since then, I've calmed down and am now able to approach our entire family's health in a more balanced and convenient way that fits into our routine and lifestyle. It's not about perfection but progress, and my belief is that even one meal approached with an intentionality is better than none.

I understand that you must have been watching your diet closely for a number of years, therefore your insulin resistance may very well have improved. Furthermore, the butter, oil, and eggs will have significantly lowered your glucose peak.
Very nice work documenting your journey and helping others. Thanks. So I just came across your videos and thought of sharing some insights based on my personal experience. You do have insulin resistance otherwise your A1C should have been less than 5. An ideal fasting sugar is 75-80 mg/dL. IMHO, you have to look holistically at everything. Your A1C will not drop to less than 5 no matter what you do IF: you have a tendency towards constipation, you have poor sleep, you have other unexplained issues e.g. hangnails, blackheads, you easily bite your cheeks while chewing food etc. Food is just one, there are so many things which need to be looked at holistically before your A1C will come to ideal level. I will try to make few videos covering all those. Modern medicine is just scratching the surface, the generational wisdom and thousands of years of evolution has a much deeper understanding of human body than our doctors know. I assume you have a smart watch and you are on top of your heart and sleep stats as those are an indirect indicator of inner body's workings and health e.g. your HRV, Resting heart rate, sleep cycles for restorative sleep etc. IMHO, there is no other tracker better than Fitbit Charge 6 at tracking sleep, one of the most overlooked and underemphasized metric. Hi good enough mama. I just recently started watching your videos. Thank you for making them. There's a lot of videos with information about what to and not to eat but none of them actually show actual blood sugar proof. I had a question? Have you found any teas that help lower or even spike up your blood sugar? I drink ginger lemon tea in the mornings (no suga) as I've heard many times that it's good for us, but I'm not sure of what it's doing to my blood sugar.

Thats exactly what they say about the apple cider vinegar, it SLOWS the intake of the sugar and avpooids the spike. So it does not avoid the bloodsuger go up - I have never heard that claimed by anyone.
I cured my pre diabetes in two weeks I was at 120 and now I’m almost every day between 80-90. Reading the comments makes me realize why people still struggle to get rid of pre diabetes or diabetes type 2. No, a rising blood sugar it’s not good after 2 hours, a normal person without diabetes or insulin resistance reading should come down to the same place it was before meal, also ACV it’s meant to be ingested with empty stomach after waking up not before every meal… intermittent fasting everyday Alfa Lipoic Acid every day and magnesium at 5pm very important also remove carbs, bread 🥖 potatoes 🥔 starch… never ever ever eat fruit or desserts on empty stomach treat fruit as dessert 🍨 eat fat protein rich food like eggs bacon 🥓 🥑 only carb I eat is full grain oatmeal 🥣 but I wash it off very well before cooking to remove the starch wash it several times until water runs almost clear otherwise your blood glucose will spike make the glucose test with and without washing it and let me know
Have you read the Oatmeal research on Dr Gregor's channel? I wonder if it would change your insulin requirements? As far as potatoes go, have you tried to cook the potato then chill it and see if the effects on your blood sugar is different eating hot potatoes vs the chilled potato?
I am assuming you took the same dose of meds? Insulin? No difference in exercise/exertion? How did you account for the extra calories of the almonds? I wonder if having ice cream 3 days in a row aggravated your resistance because of the fat content. I also wonder if the previous meals/foods of the day had any affect. Did you eat the exact same meals/foods on all three days, same exertion? I wonder what would happen if you tried it again later separating the days by a week? or changed the order of the ACV/Almonds? There can be many variables. Were you excited/ anxious one day and not the next?
The ACV graph does not look the worst. It looks the best. You want your graph line to be stable with little to no peaks and valleys. That straight line of the ACV that is gradually increasing is exactly how it should be. The very curvy lines are showing rapid spikes and falls... not what you want.
I have read in many articles in the net that caffein in coffee inhibits insuline effectivity , therefore raises blood glucose , kindly experiment on this thanks

Actually the apple cider vinegar worked the best. There was a gradual rise and fall of blood glucose. Which means it didn't spike your insulin levels which is great. ACV will actually decrease insulin resistance aka diabetes
It would be interesting to see just rice without protein, or different kinds of white rice, like basmati, Japanese etc. I used to love Kim Chee rice but I bet I would not be able to eat that now with prediabetes.
Spike high and coming down quicker is the bad one I think. Spike slowly and coming down slower is better for not feeling hungry again so quickly that’s why wholemeal, oats and brown rice have slower spikes compared to white rice, white Fluor pasta etc
Interesting. My wife and I did similar experiments 20 yrs ago with white, brown, and wild rice. For my wife it made no difference. She would spike 60+ in an hour on all of them . For me the spikes were similar but only 30. We ate the rice straight without anything added.
No doctors who reccomend potatoes and rice urge diabetics to test before and after meals.Why ? Because our numbers will NOT back up their STUPID theories and we are harming ourselves!
