Its the Liver of the abalone that was just cooked. Honestly I have no idea how it tastes, but I know that it can be turned into a paste with very little effort, so I would imagine it has a very smooth texture with a lot of the brineyness you get from most shellfish

It’s call salt Baked Abalone , French cooking have a similar dish , without the salt it will taste very bland

데판야끼는 사실 요리하시는 셰프분의 정성과 서비스도 많은 부분을 차지한다고 생각하는데 25만원짜리 치고는 상당히 음식을 거칠게 한다는 느낌이 강하네요. 조금 아쉬어요. 영상은 잘 봤습니다.
