RECIPE DESCRIPTION:
Ingredients
FOR THE POTATO BASKET
Potatoes 4 Large, peeled
Black pepper 2 Teaspoon
Salt 1 Teaspoon (to taste)
Cornstarch 2 Tablespoon
Cooking spray 2 Tablespoon
FOR THE STUFFING
Chickpeas 1⁄2 Cup (8 tbs), boiled
Sprouted green gram 1⁄2 Cup (8 tbs), boiled
Onion 1⁄2 Cup (8 tbs), finely chopped
Red bell pepper 1⁄2 Cup (8 tbs), finely chopped
Green bell pepper 1⁄2 Cup (8 tbs)
Date tamarind chutney 1⁄4 Cup (4 tbs)
Coriander mint chutney 1⁄4 Cup (4 tbs)
Sev 1⁄4 Cup (4 tbs)
Directions
GETTING READY
1. Preheat the oven to 350 degrees F.
MAKING
2. For the potato basket: In a bowl, place a small holed shredder and shred about 3 potatoes. Once done, take the big holed shredder and shred the last potato into the same bowl.
3. Using both squeeze out excess water from the shredded potatoes and remove into another bowl.
4. In the above squeezed potato mixture add black pepper, salt, corn starch and mix until well combined.
5. To make the baskets, take a 12 cup, cup-cake tray and grease the cups with some cooking oil. Using a tablespoon, spoon the shredded potato mixture into the greased cups.
6. Once done, using two fingers, make a well in the center and spread it towards the edges to make the shape of a cup. Bake this in the preheated oven at 350 degrees F for 30 minutes or until golden brown and crisp.
7. After 30 minutes, remove the tray and using a fork gently remove the potato baskets and set them on a plate.
8. For the stuffing: Take the baked potato baskets one at a time and stuff it with 1/2 teaspoon each of the following ingredients of chick peas, sprouted green gram, onion, red bell pepper, green bell pepper, date tamarind chutney and coriander mint chutney.
SERVING
9. Serve these stuffed potato baskets garnished with sev.

What binding did you use? Did you spread very thin? If you spread thick, they won't come out right.

They may get soft but you can make them crispy again by baking on low heat again.

You can use egg, egg substitutes such as flax seeds, ener-g egg replacer or simply other binding flours might work, too.

Which potato do you use? Russet or Idaho potatoes have a high starch and low moisture content, meaning they bake well, and make excellent Baskets or French fries.

Which potato do you use? It also depend on potatoes so change potato type. Drain and squeeze shredded potatoes well and make sure to add binding agent.

You can stuff cheese mixed with vegetables, boiled seasoned chickpeas, any kind of salad such as quinoa or other grain and so on..

Hi Bhavna, This is the first time am commenting on ur videos :) I have seen almost all ur videos. I have tried it also. I like the tips and tricks u showed in the videos. Especially, the 3G and 4G box is awesome. U know? After seeing tht, I have also started preparing that every month. I love Gujju Dishes very much. You can shred potato in advance and bake it fresh. If you bake in advance it is hard to get crispy texture again.

Super smart idea of baking in muffin tray. I ate basket chaat in 2000 in Royal Cafe, Lucknow, since then I have been scratching my head how the heck, they make these baskets. They are super crunchy. I am sure they add something more than potatoes. I am going to give your recipe a try and see if I can modify more, may be adding besan or something?

Hi...bhavana..the basket looks awesome...actually I have a different question...My brother brought a baking tray (the same which is shown in this video). The problem is that it is not fitting in my microwave. I don't know what to do. If I cut the tray into two, can I use them in the oven. Pls help. I just love that tray and don't want to leave them.

French people also make such a thing. They call it Potato nest. They also make dedicated nested fryer set, import places are supposed to carry them. Do a google search for potato nest fryer to see how those look.

I usually do not store. I use them immediately. But if you store, you will have to bake them again to make them crispy.

hi, i tried this receipe in microwave @ convection mode @ 170 degree for 30min However the basket didnt turn out well ..they were not baked from the bottom .. alos plz let me know shd the inner side of the basket too be golden brown?? Kindly suggest thanx

Hi Bhavna, I tried to make this potato nests by baking it but not only it dint turn out good, It was not at all crispy. They were falling off and not staying upright. What might have gone wrong there?

I'm going make these as a breakfast dish because my husband loves fried potatoes and onion but i shall bake and stuff with scrapped eggs,crumbled sausage, and cheese. :-)

Hi, my potato basket got stale, i cooked it in the oven and then left it our for an hour before I served it. Am i suppose to eat it right away when its still fresh out of oven?
